어린이집 교사가 경험한 유아의 까다로운 식습관 인식 및 지도의 어려움에 대한 질적 연구

국문 초록

본 연구는 교사가 까다로운 식습관을 갖고 있는 영아를 대상으로 올바른 식습관 형성을 위해 교사 자신의 반성적인 성찰을 통한 지도 방안들을 적용 실천하는 과정에서 영아와 교사 그리고 부모가 함께 변화할 것을 기대하며 개선방안을 모색하고자 하는 것에 목적이 있다. 서울시 S구 소재 A국공립 어린이집의 만 2세반 영아 중 까다로운 식습관을 가진 영아 4명을 선별하여 2020년 7월부터 12월까지 약 6개월 동안 연구를 수행하였다. 연구자는 연구 참여자들의 하루일과, 간식과 점심시간을 동영상 촬영 후 전사하였으며, 식습관 지도의 모습 및 영아들의 식습관에서 발생하는 여러 가지 상황들과 지도의 어려움에 관한 참여관찰, 동료교사와의 심층면담, 학부모 면담 등의 자료를 수집 및 분석하였다. 연구결과 첫째, 영아의 까다로운 식습관 인식은 음식에 대한 지속적인 거부, 새로운 음식에 대해 강한 부정, 제한된 음식 섭취, 음식을 거부하는 다양한 행동 등으로 나타났다. 둘째, 까다로운 식습관 지도의 어려움은 교사의 여러 역할 수행에 대한 부담감, 유아의 가정 연계지도 및 유아의 개별적 맞춤지도의 어려움으로 나타났다. 셋째, 교사의 식습관 지도 전략 및 반성적 고찰을 통해 영아, 교사 및 부모에게 긍정적인 변화가 일어났다. 영아의 식습관 지도는 교사 자신에 대한 반성적인 태도와 가정 연계가 이루어지도록 식습관 지도에 대한 인식과 방향에 대해 제언하였다.

영문 초록

The purpose of this study was to find ways to bring about positive changes in infants, teachers, and parents during the process of providing eating behavior guidance in light of the teachers’ self-reflection of the experience of trying to inculcate proper eating behavior in infants who are picky eaters. This study was conducted between July and December 2020 at “A” public childcare center in “S”-gu of Seoul, where four 2-year-old toddlers displaying picky eating behaviors were selected and observed. We filmed and transcribed the daily routines and snack and lunch times of the research participants; we also collected and analyzed data on the following: participatory observations of eating behavior guidance, various situations and difficulties that arise when dealing with infants’ eating behaviors and providing guidance, in-depth interviews with co-teachers, and interviews with parents. The picky eating behaviors of infants can be classified as continuous rejection of food, strong refusal to eat new food, limited consumption of food, and a variety of actions rejecting food. Furthermore, the difficulties in providing guidance for picky eating behaviors included teachers feeling burdened by having to perform various roles, lack of continued guidance at the infant’s home, and need for individualized guidance for each infant. Lastly, positive changes took place among the infants, teachers, and parents through strategies for teachers on providing guidance on eating behavior and reflective reviews. Recognizing picky eating behaviors and directing the provision of guidance are necessary measures; moreover, the teachers should be self-reflective, and the guidance should be practiced at home as well.
