국문 초록

本稿は、長屋王家木簡に記された食材から、貴族の栄養状態を探ろうとするものである。 平安時代の場合、貴族の献立や栄養状態について詳しく分析された研究があるが、奈良時代の栄養状態については農民や写経生のものがあるだけで、貴族に関する栄養状態の研究はほぼないと言える。これは一日の正確な献立がわからないと正確な栄養状態を算出することができないためであり、奈良時代の貴族の正確な献立がわからないことに起因する。 1988年に発見された長屋王家木簡は、長屋王という貴族の邸宅跡から発見された木簡であり、そこに記載された食材は間違いなく、その邸宅ですべてが消費されたはずである。これは正確な献立が分からないまでも、一貴族が何を食べていたのかを示すものであり、ここに献立の内容が判明すれば貴族の栄養状態を知ることができる。 よって本稿では、長屋王家木簡から再現された貴族の献立から、当時の貴族の栄養状態を探ろうと思う。

영문 초록

In this article, I explore the nutritional status of the noble through the ingredients represented in the wooden tablets of Nagayaou’s family. In the case of the Heian period, the menu of the meal for the noble and their nutritional status have been studied minutely. On the other hand, in the case of the Nara period, though the nutritional status of farmers and the students of sutras has been revealed, the nutritional status of the noble has hardly been studied. The wooden tablets of Nagayaou’s family were found in 1988 at the side of the mansion owned by the noble called Nagayaou. Since the tablets indicate what the noble ate at the time, and the information about the menu written on the tablets enables us to reveal the nutritional status of the noble, even though the exact menu is still unknown. Recently, the menu of the meals for the nobles at the time has been retrieved through the analysis of the wooden tables of Nagayaou’s family, and the present study explores the nutritional status of the nobles at the time based on these materials.
