국문 초록

본 연구는 한식의 세계화 추진에 있어 세계적인 한식 조리인력양성을 위한 조리 교육환경 개선을 위해 국내에 새롭게 도입되고 있는 국가직무능력표준(NCS)를 접목하기 위해 접목 가능성을 살펴본 연구이다. 우선 현재 한식조리교유과정에서각 과목별로 중요도를 살펴본 결과 현장업무에 있어서는 조리에 대한 열정이나 적극적 태도 그리고 동료와의 친화력 순으로 가장 높은 중요도를 보였다. 이를 통해 요리란 그 적성과 의지가 무엇보다 중요하게 작용하는 전문 분야임을 눈여겨 볼수 있었고 최근 들어 외식업계의 전문화와 기업화에 따른 개인 운영이 아닌 기업적 운영에 따른 동료 직원들과의 친화력이 중요하게 대두되고 있음을 시사한다.

영문 초록

This study is intended to look into the possibility of combination with the newly introducing national competency standards(NCS) to improve cooking education environment for global Korean culinary human resources in stroking the globalization of Korean Food. First of all, the importance by each subject in the current curriculum for Korean culinary arts majors showed that passion or positive attitude for cooking were the highest, followed by sociability with colleagues. Through this, it is notable that cooking is the area of expertise, which the aptitude and will are more important than anything, and that sociability with colleagues by corporate operation, not individual operation by specialization and corporation of food service industry is important recently. The importance of office skills like word-processing skill or presentation skill was the lowest on the job training. Consequently, the educational portion needs to be lowered.
