더덕과 팥의 성분분석과 더덕양갱연구

국문 초록

더덕과 팥의 실용적 활용방법을 모색하기 위해 더덕과 팥의 일반성분 분석, 식이섬유, 유리당, 폴리페놀화합물 함량분석과 항산화 활성 측정을 통해 양갱의 기능성을 증대시키고자 하였다. 더덕과 팥의 총 폴리페놀 함량 더덕 5.74 mg/g, 팥 4.14 mg/g과 총플라노 보이드 함량이 더덕 5.07mg/g, 팥 1.29 mg/g, DPPH free radical 소거 활성은 더덕 31.42%, 팥 37.98% 검출되었다. 또한 SOD 유사활성은 더덕은 25.24%, 팥은 35.33%으로 유사한 경향을 보여 더덕과 팥이 양 갱의 부 원료로 기능성을 증대시킬 수 있을 것으로 보인다. 또한 더덕을 첨가한 양갱은 더덕 첨가량이 14~21%를 첨가하는 것이 가장 적당한 것으로 판단된다.

영문 초록

The purpose of this study is to seek a way to use Codonopsis lanceolata and adzuki beans practically, and to increase a possibility as raw material of sweet jelly through general componential analysis of Codonopsis lanceolata and adzuki beans, content analysis of dietary fiber, free sugar, and polyphenol compound, and antioxidative activity measurement to develop material of functional processed food. Moisture content of Codonopsis lanceolata is 90/45%. About free sugar content of Codonopsis lanceolata and adzuki beans, glucose content of Codonopsis lanceolata is 2.56%, fructose content of Codonopsis lanceolata is 18.26%, and saccharose content of Codonopsis lanceolata is 1.15%. In addition, glucose content of adzuki beans is 0.85%, fructose is not detected in adzuki beans, and saccharose content of adzuki beans is 7.41%. Total polyphenol compound content of Codonopsis lanceolata is 5.74mg/g, and total polyphenol compound content of adzuki beans is 4.14mg/g. Total flavonoid content of Codonopsis lanceolata is 5.07mg/g, and total flavonoid content of adzuki beans is 1.29mg/g. About antioxidative activity of Codonopsis lanceolata and adzuki beans, DPPH free radical scavenging activity of Codonopsis lanceolata is 31.42%, and DPPH free radical scavenging activity of adzuki beans is 37.98%. SOD-like Activity is similar to DPPH Activity, so SOD-like Activity of Codonopsis lanceolata is 25.24%, and SOD-like Activity of adzuki beans is 35.33%. As amino acid content of Codonopsis lanceolata and adzuki beans is 18 kinds, asparagine and glutamic acid are the highest amino acid. Amino acid content of adzuki beans is 15 kinds, and tyrosine is the highest amino acid as 150.26ppm, and much aspartic acid and arginine are contained in adzuki beans. About Yanggaeng preference with Codonopsis lanceolata , a non-addictive group shows the lowest value as 5.58, and the preference is in the order of 21%>14%>28%>7%>0%. Therefore, adding 14~21% of Codonopsis lanceolata is the most fitting addition.
