외식 사업체의 비용-수익 구조에 관한 실증적 연구

국문 초록

연구목적: 외식업체의 주요 비용(식재료비, 인건비, 임차비)이 사업소득에 미치는 영향을 실증적으로 분석하고, 기간 및 계층에 따른 비용-수익 구조의 변화를 탐구하여 외식산업의 구조적 문제에 대한 시사점을 제시하고자 하였다. 연구방법: 한국농촌경제연구원이 수집한 2019년부터 2023년 간의 14,950개 데이터를 활용하여 위계적 회귀분석과 분위 회귀분석을 수행하였다. 이를 통해 비용구조와 수익성의 관계를 분석하고, 기간 및 계층에 따른 차이를 비교하였다. 연구결과: 주요 비용의 증가가 사업소득에 미치는 부정적 영향은 인건비와 임차비의 영향이 식재료비보다 큰 것으로 나타났다. 이러한 영향 관계는 사업소득이 작은 계층에서 더욱 크게 나타났으며, COVID-19 팬데믹 기간인 2020년과 2021년에는 주요 비용이 사업소득에 미치는 영향이 감소한 것으로 확인되었다. 시사점: 본 연구는 외식업체 수익구조의 문제점을 진단하고, 비용-수익 구조의 변화와 계층 간 차이의 분석 결과에 대한 실무적 시사점을 제시하였다. 또한, 학문적, 정책적 차원에서 후속 연구의 필요성과 발전 방향을 제언하였다.

영문 초록

Objective: This study aims to empirically analyze the effects of prime costs(food, labor, and rental costs) on business income in food service businesses and explore changes in cost-revenue structures over time and across income levels. The study seeks to provide insights into structural issues in the food service industry. Methods: This study analyzed the data from 14,950 food service businesses, collected by the Korea Rural Economic Institute from 2019 to 2023, by using hierarchical regression and quantile regression analyses. These methods were used to examine the relationship between cost structures and profitability and to compare differences across time periods and income levels. Results: The negative effects of cost increases on business income were greater for labor and rental costs than for food costs. These effects were more pronounced in lower-income groups. Additionally, during the COVID-19 pandemic(2020-2021), the impact of prime costs on business income decreased. Implications: This study diagnoses structural issues in the profitability of food service businesses and provides practical implications for addressing changes in cost-revenue structures and differences across income levels. Furthermore, it highlights the need for further academic and policy-oriented research to guide future improvements and solutions.
