The purpose of the study was to develop an eating habit checklist for screening college students at risk of nutrient inadequacy. Eating behaviors, food intake, and anthropometric data were collected from 169 college students(79 male and 90 female). Mean Adequacy Ratio (MAR) of six nutrients such as vitamin A, vitamin C, riboflavin, calcium, iron, zinc and the number of nutrients the students consumed below Estimated Average Requirement (EAR) among the six nutrients were used as indices to detect the risk of inadequate intake. Spearson correlation coefficients were calculated between eating behaviors scores and inadequate nutrient intake indices in order to select questions included in the checklist. Meal frequency, enough time for breakfast and eating frequency of staple foods, Kimchi, milk, meats, beans, and green vegetables were selected. Stepwise regression analysis was performed to give each item a different weight by prediction strength. To determine the cut-off point of the test score, sensitivity, specificity, and positive predictive values were calculated. The 8-item checklist with test results from 0 to 26 points was developed, and those with equal or higher than 16 points were diagnosed as the group of low risk of inadequate nutrient intake, and those with 12 or 15 points diagnosed as moderate-risk group, and those with equal or lower than 11 points were diagnosed as the group of high risk of inadequate nutrient intake. According to the criteria above, 51.5% was diagnosed as the group of high risk of inadequate nutrient intake, and 48.5% as low risk of inadequate nutrient intake. The proportions of the subjects who consumed below EAR were highest in the high risk group. The checklist developed in this study will provide a useful screening tool to identify college students as risk of inadequate nutrient intake.
