하우스와인의 적정 서브온도관리에 관한 연구

국문 초록

이 연구는 서울 소재 특급호텔 식음료업장 종사자들을 대상으로 와인(하우스와인 포함)에 대한 지식 정도, 서브온도와 고객만족도 간의 관계, 하우스와인 서브온도에 대한 지식과 업무적용 정도, 장비의 필요성, 구비성 개선 부분 및 교육의 필요성 등에 대하여 실증 분석하였다. 분석결과, 대부분의 종사자들은 와인의 지식은 어느 정도 습득하고 있으나 상대적으로 하우스와인에 대한 지식은 부족한 것으로 나타났다. 또한 하우스와인의 적정 서브온도와 고객만족도간의 상관관계가 높으며, 적정 서브온도의 중요성은 깨닫고 있지만 그에 따른 시설물이나 장비가 부족하여 이에 대한 개선점이 필요한 것으로 나타났다. 아울러 종사자들은 하우스와인의 적정 서브온도에 대한 교육의 필요성을 높게 인식하는 것으로 나타났다.

영문 초록

This study is to analyze the current management status of proper housewine service temperature. Surveying 196 employees of restaurants in superdeluxe hotels in Seoul, this study found tint most employees had less knowledge of housewines than that of general wines. The statistically significant differences were shown in sex, age, career period, and job position. They revealed the high correlation between proper service temperature of housewines and customer satisfaction. Only in an age variable, the statistically significant difference was appeared. While they felt the necessity of the proper service temperature highly, they responded the lack of housewine-related facilities. Regarding the improvement of facilities, age, outlets, career period, and job position variables were shown to be statistically significant. Finally, they showed high degree of housewine-related service education. In terms of age and career period variables, statistically significance difference were shown.
