국문 초록

전체적인 연구결과 한식 세계화를 위한 조리전문교육이 진로계획에 유의적인 영향을 미치고 교육지원환경과 제도적 뒷받침의 매개에 따라 효과 또한 높아지는 것으로 나타났다. 이는 한류의 확산과 한식 분야에 종사하는 관련 직무의 관점에서 세계화에 부응한 외국어와 전문 조리능력, 경영전략, 홍보 컨설팅 교육을 체계적으로 받음으로써 국제적 한식 전문가의 자질과 능력을 발휘할 수 있음을 의미한다. 이 같은 인력양성, 교육체계 등이 한 부분에 치중되지 않고 균형된 발전을 위해서는 한식 코디네이터와 지속적인 메뉴 개발을 위한 개발 담당자 등의 우수인력발굴과 양성이 중요함을 뒷받침하고 또한 한식의 글로벌 환경에 맞는 안정적 경영과 조리정착을 위해 컨설팅 방법 및 경영전략과 함께 홍보 전략을 겸비할 수 있는 국제적 커리큘럼에 치중된 교육계획이 반영되어야 할 것을 시사한 것으로 평가할 수있다.

영문 초록

The overall findings showed that the professional cooking education for the globalization of Korean food had a significant effect on career programs, and the effect of it increased along with the mediation of educational support environment and institutional support. This means that employees in the field of Korean food can display their qualities and abilities as international Korean food experts by receiving a systematic education of foreign languages, professional cooking skills, management strategies and publicity consulting to meet the globalization of Korean food from a perspective of the spread of Korean wave and Korean food-related job. Consequently, it is important to discover and train outstanding human resources such as Korean food coordinators and menu development practitioners for the balanced development of human resources training and educational system without focusing on one part. And the stable management and cooking for the global environment of Korean food have need of reflecting the educational programs focused on an international curriculum combining publicity strategies with consulting methods and management strategies.
