민물어종 전문음식점 매출성과의 결정요인 분석

국문 초록

본 연구의 대상은 한식업종으로 분류되는 음식점업 중 민물어종 전문음식점이며, 연구목적은 구조화된 인과모형에 의해 민물어종 전문음식점의 매출성과에 영향을 미치는 결정요인을 분석하는 것이다. 민물어종은 바다(saltwater)어종이 아닌 육지부의 내수면(inland water 또는 freshwater)이나 양식장에서 생산되는 어종이다. 민물어종 음식점에 대한 연구는 음식점업 중에서도 상대적으로 관심을덜 받아 온 분야이며 매출성과를 분석한 연구 또한 전무하다. 따라서 본 연구는 전국의 민물어종 전문음식점 중 291개의 유효표본을 수집하여 이들 표본의 매출성과에 영향을 줄 것으로 판단되는 변수(대표 민물어종, 입지특성, 고객관계행동요인 등)를 도출하고 그에 따른 매출성과와 영향요인들 간의 인과관계를 살펴보았다. 분석에 적용된 모형은 OLS와 가중최소제곱법(Weighted Least Square: WLS)이다. 본 연구는 처음으로 민물어종 전문음식점의 매출성과를 구조적으로 밝혔다는 점에서 의의를 갖으며 민물어종 전문음식점에서 중요한 판매전략으로 사용이 가능하다.

영문 초록

This study aims at providing conceptual framework by analysis of determinants of sales in the restaurant. This framework will be helpful for the restaurant to establish selling strategy. This study investigates restaurant sales performance and factors influencing restaurants sales. Especially, this paper focuses on the specialized small restaurant who sells the inland water fish.. Although the importance of sales performance of small restaurant has been rising, there are not many studies on that. In addition, previous research in small restaurant has focused predominantly on seafood restaurant. Therefore, this study is very critical to understand the establishment of sales strategy for specialized small restaurant* that responds to the customer needs. The data was collected based on the proportional allocation sampling. As heteroscedasticity exists in a result of OLS (Ordinary Least Square), the WLS (Weighted Least Square) analysis was adopted to analyse the data. Finally, the result shows that fish type, location of restaurant, and CRM were the key determinants that affect the sales performance, specialized small restaurant: the restaurant using inland water fish as their ingredients for dish.
