소규모 외식 매장에서 활용 가능한 서빙 로봇 폼펙터 제안 연구

국문 초록

푸드테크 시장의 무인화가 일상화되면서 외식업계에서는 반복적인 업무를 로봇으로 대체하여 인건비 상승과 인력난 문제를 해결하려는 시도가 주목받고 있으며, 이에 따라 서빙 로봇의 보급률도 지속적으로 확대되고 있다. 국내 외식 매장은 중국과 달리 소규모로 운영되는 경우가 많지만, 현재 상용화된 서빙 로봇은 주로 중대형 매장에서 사용하기에 적합하여, 이러한 배경을 바탕으로 본 연구에서는 소규모 외식 매장에서 활용할 수 있는 서빙 로봇 폼펙터를 제안하고자 이를 위해 먼저, 문헌 조사를 통해 서빙 로봇의 개념과 현재 판매되고 있는 서빙 로봇을 조사하였다. 2023년 12월까지 출시된 8개 회사의 서빙 로봇 제품을 대상으로 외관 형태와 적용된 기능과 기술, 제품 규격을 정리하여 서빙 로봇의 구조와 구성을 이해하고 기초 자료로 활용하였다. 이와 함께 서빙 로봇이 운영되는 5곳의 매장을 방문하여 관찰조사를 통해 제공되는 서빙 로봇의 서비스 단계를 파악하고 서비스 단계에서 사용되는 기능을 파악하였다. 이후 블루프린트 템플릿을 활용하여 단계별 서비스 시나리오를 작성하고 소규모 외식 매장에서 활용 가능한 서빙 로봇 폼펙터를 제안하기 위한 인사이트 도출과 서비스 단계에 따른 기능을 확보하였다. 마지막으로 앞선 관찰조사와 작성된 블루프린트를 기반으로 소규모 외식 매장에서 활용 가능한 서빙 로봇 폼펙터를 제안하였다. 본 연구의 내용은 소규모 외식 매장에서 활용할 수 있는 서빙 로봇의 선행 디자인 개발이나 사업화 제품 개발 시 기초 자료로 활용되길 기대한다.

영문 초록

As the food technology market becomes more common, attempts to solve the problem of rising labor costs and manpower shortages are drawing attention in the food service industry by replacing repetitive tasks with robots, and accordingly, the supply rate of serving robots is continuously expanding. Unlike China, restaurant stores in Korea often operate on a small scale, but serving robots that are currently commercially available are mainly suitable for use in medium and large-sized stores. Based on this background, this study first investigated the concept of serving robots and serving robots currently on sale through literature research to propose a serving robot form factor that can be used in small restaurant stores. For serving robot products from eight companies released by December 2023, the external shape, applied function, technology, and product specification were summarized to understand the structure and composition of serving robots and used as basic data. In addition, we visited five stores where serving robots are operated, identified the service stage of the serving robot provided through observation, and identified the functions used in the service stage. After that, a step-by-step service scenario was created using a blueprint template, and insights were derived to propose a serving robot form factor that can be used in small restaurant stores and functions according to service steps were secured. Finally, based on the previous observation and the created blue print, a serving robot form factor that can be used in small restaurant stores was proposed. The contents of this study are expected to be used as basic data when developing the prior design of serving robots or commercialized products that can be used in small restaurant stores.
