영문 초록

This study had three major purposes: 1) to examine the management activation according to menu analysis 2) to examine the management activation according to nutrition analysis of menu. 3) to analysis cost, preference menu item, menu book and a profit Italy restaurant. It was collected to data at 5 deluxe first class hotels Italy restaurant in Seoul. The findings from this study were as follows. First, it was found that giving effect food of menu book according to menu. Secondly, it was found mean analysis, salling analysis. Thirdly, it was found that thinking of importance cost analysis, nutrition analysis, and a popularity list. Consequently, menu should be expel system for control of menu analysis, salling analysis, cost analysis, nutrition analysis, popularity list, and menu book because menu give big effect the hotel management activation
