생태유아교육기관의 사기그릇 친환경 농산물 급식이 갖는 의미 탐색

국문 초록

본 연구는 생태유아교육기관의 사기그릇 친환경 농산물 급식이 갖는 의미에 대해 구체적으로 살펴보고자 하였다. 연구기관은 서울시 K구에 위치한 (사)생태유아공동체의 직장보육시설 R어린이집으로 개원과 함께 생명살림 밥상운동을 실천하고자, 점심 식사 시 철제 스테인레스 식판이 아닌 밥공기, 국그릇, 반찬그릇으로 구성된 사기 식기를 사용하며 친환경 농산물 급식을 실천하고 있다. 연구 참여자는 원장, 경력교사 5명, 조리사 2명으로 R어린이집에 근무하기 전에 타 영유아교육기관에서 스테인레스 식판을 사용했던 경험을 가진 연구 참여자들이다. 연구기간은 2014년 3월10일부터 2015년 1월31일까지 진행되었으며, 참여관찰 및 심층면담을 실시하였다. 연구결과 첫째, 생태유아교육기관에서의 친환경 급식이 가지는 의미는 편견을 없애주는, 건강을 지켜주는, 지식을 넓혀주는 친환경 급식으로 나타났다. 둘째, 생태유아교육기관에서의 사기그릇 점심 급식이 가지는 의미는 생명의 그릇, 사랑의 그릇, 익숙한 그릇, 편안한 그릇, 배려의 그릇으로 나타났다. 향후 영유아교육기관의 친환경 농산물 급식 및 사기 식기 사용 활성화를 위한 후속연구의 기초자료가 될 수 있을 것이다.

영문 초록

The purpose of this study was to examine the meaning of lunch service in an eco-early childhood education centers using chinaware and environmentally friendly agricultural products. An employer-supported daycare center was selected, which was an eco-early childhood education centers located in a district of Seoul, was selected. The daycare center has used chinaware instead of stainless food trays since it was established, in accordance with the life-giving dining table campaign for all the lunch food items of boiled rice, soup, and side dishes. The subjects in this study were the principal, five experienced teachers, and two cooks. They had used stainless food trays in other educational institutions for infants, toddlers or preschoolers before they worked in this daycare center. This study was undertaken from March 10 to January 31, 2015, participant observation and in-depth interviews. The findings of the study were as follows: First, with regard to the meaning, of meals, an environmentally friendly lunch service was regarded as one where meals reduce prejudice, maintain health, and enlarge knowledge. Second, concerning the meaning of a lunch service using chinaware in this type of centers, the dishes were regarded as dishes of life, dishes of love, familiar dishes, comfortable dishes and considerate dishes. The findings of the study are expected to provide useful information on future research into lunch services using environment-friendly produce and how to boost the use of chinaware in child-care centers
