초등 예비교사의 식생활 안전 인식 및 역량에 관한 연구

국문 초록

이 연구의 목적은 초등 예비교사의 식생활 안전 인식과 역량을 조사 분석함으로써 초등 예비교사의 식생활 안전교육 내용 선정을 위한 기초자료를 제공하는 데 있다. 이를 위해 초등예비교사를 대상으로 설문조사를 실시하였으며, 그 결과는 다음과 같다. 첫째, 초등 예비교사들은 식품 구입 시, 식품의 안전성이나 영양보다 맛을 가장 중요하게 여기는 것으로 나타났으나, 식품 안전에 대한 관심도는 대체로 높은 것으로 나타났다. 식품안전에 대한 정보는 대부분이 인터넷, TV/라디오 등과 같은 대중매체를 통해서 접했고, 세균 및 바이러스가 식품 안전을 가장 위협한다고 인식했다. 식품 안전이 가장 불안하다고 여기는 식품군은 어류/어패류이었고 식품 안전사고의 발생 이유는 식품을 생산하거나 유통시키고 판매하는 관련자들의 책임의식이 부족하기 때문이라고 인식했다. 그리고 초등 예비교사의 식품안전 체감도의 하위 영역 중 식품 표시 신뢰도(3.70±.57)가 가장 높게 나타났으며, 남자에 비해 여자가 체감하는 식품 위해 우려도와 식품 품목별 불안도가 높게 나타났다(p<.001, p<.05). 둘째, 식생활 안전 역량에서는 과일 및 채소의 세척 방법에 대한 정답자 비율이 가장 낮게 나타났으며, 식품 안전교육 필요성에 대한 태도(4.16±.65)와 조리 전 식품의 위생 상태를 확인하는 행동(4.32±.74)은 높게 나타났다. 그리고 과일, 채소 세척 방법과 고온 튀김 시 주의사항 관련 식품 안전 지식은 남자가 높았고(p<.01), 구매 전 식품첨가물 확인 행동은 남자가 냉장고 관리 관련 위생 처리 행동은 여자가 더 잘 실천하고 있었다(p<.05, p<.01). 셋째, 초등 예비교사의 식품 안전 체감 지수는 식생활 안전 역량 지수에 비해 상대적으로 낮게 나타났다. 그리고 초등 예비교사의 식품 안전 태도(61.22±16.44)와 기능(59.29±11.17)에 비해 식품 안전 지식(52.49±20.39)이 상대적으로 낮은 것으로 나타났다. 그러므로 초등 예비교사들의 식품 위해 및 불안에 대한 올바른 인식을 정립하기 위한 교육과 함께 식생활 안전 지식 함양을 위한 실질적이고 구체적인 교육이 마련되어야 할 것이다.

영문 초록

The objective of this study is to investigate and analyze the dietary life safety perception and competency among pre-service elementary teachers. As a result, it was revealed that when purchasing food products, pre-service elementary teachers regarded taste of food as more important than safety or nutrition of food, but their interest in food safety was mostly high. Most of the subjects received information of food safety via mass media such as the Internet, TV and radio and perceived that bacteria and viruses posed the biggest threat to food safety. According to them, the food group deemed to cause the potentially highest apprehension for food safety was fish and shells, and food safety accidents were attributed to insufficient sense of responsibility of those involved in production, distribution, and marketing of food. When it comes to food safety perception, reliability of food labeling(3.70±.57) was the highest, and concerns about food hazards and food apprehension per food item were higher in females than males(p<.001, p<.05). Second, when it comes to dietary life safety competency, the proportion of the subjects who gave the correct answer in relation to cleaning methods of fruits and vegetables was the lowest. Their attitude towards the need for food safety education (4.16±.65) and the pre-cooking behavior of checking hygienic conditions of food(4.32±.74) was found to be high. The degree of knowledge about food safety related to precautions for deep fry cooking as well as cleaning methods of fruits and vegetables was higher in male subjects. The pre-purchase behavior of checking food additives was being practiced better by male subjects (p<.01), and the behavior relevant to sanitization for refrigerator management was being practiced better by female subjects (p<.05, p<.01). Finally, the perceived food safety index among pre-service elementary teachers was revealed to be relatively low compared to the dietary life safety competency index. The food safety knowledge (52.49±20.39) among pre-service elementary teachers was revealed to be relatively low compared to the food safety attitudes (61.22±16.44) and food safety behaviors( 59.29±11.17).
