The Effect of Chefs’ Extra-role Activity on Restaurant Performance : The Mediating Role of Core Competence and External Evaluation

국문 초록

서비스 경영에 대한 기존 연구는 지속성장을 위한 방안으로 행위자의 역할외 행동에 많은 관심을 기울여 왔다. 하지만, 역할외 행동이 성과를 향상시키는데 있어, 핵심역량과 관련한 복잡한 과정에 대하여 우리가 명확하게 이해하고 있는 것은 아니다. 따라서 본 연구는 조리사협회에서의 자원봉사와 같은 조리사의 사회적 활동에 중점을 두어, 조리사의 사회적 활동, 핵심역량, 그리고 음식점 경영성과간의 상관관계를 분석하고자 한다. 서울에서 활동하고 있는 99명의 직접경영 조리사가 응답한 설문조사 결과를 경로 분석한 결과, 조리사의 다양한 사회적 활동은 메뉴개발 및 경력과 같은 핵심역량에 긍정적인 영향을 미치고, 나아가 그 핵심역량이 다시 음식점의 경영성과를 향상시키는 것으로 밝혀졌다. 상기의 과정에서, 외부평가는 핵심역량과 음식점 경영성과간의, 또는 조리사의 사회적 활동과 음식점 경영성과간의 긍정관계를 매개하였다. 따라서 본 연구는 역할외 활동으로서의 행위자의 사회적 활동이 단순히 핵심역량에 대한 부가적인 요소로 취급되어서는 안 되고, 대신 핵심역량을 보완하는 필수적인 요소로 이해되어야 함을 시사한다.

영문 초록

The studies on service business have paid increasing attention to the role of actors’ extra-role activity for sustainable growth. However, we do not clearly understand the complicated process in which the extra-role activity improves performance in relation to core competences. This study, drawing on chefs’ social activities, such as voluntary services in associations, examines the relationships among chefs’ social activities, their core competences, and restaurant performance. A path analysis of survey data on 99 owner-chefs in Seoul, South Korea shows that chefs’ social activities in diverse settings positively affect their core competences, such as menu development and career, and then the core competences in turn improve restaurant performance. It is also noteworthy that in the process, external evaluation mediates the relationships between core competences and restaurant performance or between chefs’ social activities and restaurant performance. This study thus suggests that actors’ social activities as extra-role activity should not be regarded as discretionary to their core competences, but necessarily complementary for their performance.
