COVID-19로 인한 국내 육류 수요체계의 변화

국문 초록

본 연구는 COVID-19 이후 가정 내 육류 소비행태의 변화를 파악하기 위해 쇠고기, 돼지고기, 닭고기, 육류가공식품의 4가지 품목에 대한 수요체계와 대체관계를 실증적으로 분석하였다. 본 연구에서는 농촌진흥청 소비자패널 1040가구를 분석대상으로 선정하였으며, 2015년 1월부터 2020년 12월까지의 농식품 구매 자료를 분석에 사용하였다. COVID-19로 인한 육류 수요함수와 가격탄력성의 변화를 추정하기 위해 COVID-19 발생 여부를 더미변수로 추가한 QUAIDS 모형을 사용하였다. 분석결과, COVID-19의 발생으로 인해 국내 소비자의 돼지고기, 육류가공식품의 구매비중은 증가한 반면, 쇠고기와 닭고기의 구매비중은 감소하였다. 가격탄력성 추정결과, COVID-19 발생 후 쇠고기와 돼지고기 간의 보완관계, 쇠고기와 육류가공식품 간의 보완관계, 돼지고기와 닭고기 간의 대체관계가 사라졌으며, 닭고기와 육류가공식품 간의 보완관계가 나타났다. COVID-19로 인해 외식 수요가 감소하고 내식의 비중이 증가하고 있는 현 상황에서 본 연구결과는 COVID-19로 인해 타격을 입은 육류 외식산업이 새로운 시장 기회를 탐색하고 이에 대한 전략을 수립할 수 있도록 하는 시사점을 제공한다.

영문 초록

This study empirically examines the demand system and substitution relationship for four items of beef, pork, chicken, and processed meat to understand changes in meat consumption after COVID-19. In this study, 1040 households consumer panels of the RDA were selected and food purchase data from January 2015 to December 2020 were used for the analysis. The QUAIDS model was used to estimate the changes in the meat demand and price elasticity due to COVID-19. The results show that the purchases of pork and processed meat increased, while purchases of beef and chicken decreased after COVID-19. In addition, the complementary relationship between beef and pork, and beef and processed meat, and the substitutional relationship between pork and chicken disappeared, and the complementary relationship between chicken and processed meat appeared after COVID-19. These findings provide implications for the foodservice industry to explore new market opportunities and establish strategies for the COVID-19 crisis.
