국문 초록

높아진 소비자의 위생수준에 부응하기 위해서 모든 유제품의 원료가 되는 원유의 품질이 지속적으로 향상되지 않으면 안 된다. 그리하여 국내에서도 1993년 6월 이후 유질 개선 방법의 일환으로 세균수와 체세포수에 의한 유대차등지급제를 실시하였다. 그 결과 세균수는 크게 줄어 1999년 현재 전체 농가의 80% 이상이 세균수 10만 미만의 1등급 원유를 생산하고 있다. 체세포수의 경우도 위생등급제 실시 이후 지속적으로 향상되고 있지만 여전히 전체 농가의 30% 이상이 50만 이상의 3등급 원유를 생산하고 있어 여전히 해결해야 할 많은 문제점을 안고 있다. 계절별로는 여름철에 1등급 위생등급 분포율이 가장 낮았으며, 지역별로도 차이를 나타내어 유질 향상을 위한 좀 더 적극적이고 다양한 방법들이 개발되어져야 할 것이다. 특히 목장의 생산성과 매우 밀접한 관련이 있는 체세포수 관리를 위해 좀 더 체계적이고 효과적인 관리프로그램 개발이 절실한 실정이다. 앞으로 원유의 품질 향상을 위한 지속적인 유대지불 체계 개선 및 관리 프로그램 개발이 필요할 것으로 사료된다.

영문 초록

The total bacterial counts and somatic cell counts in milk are increasingly used as indicators of milk quality. These factors are determined the milk price in the most of countries. This study evaluated the effects of milk hygienic quality after application of milk payment system according to total bacterial counts and somatic cell counts of raw milk during the period from 1993 to 1999 in Korea. The proportion of herd the first grade of total bacterial counts (＜100,000 CFU/ml) after application of milk payment system had improved from 26.7% to 85.4%, and decreased from 54.6% to 6.1% in third and forth grade of total bacterial counts (＞250,000 CFU/ml), respectively. Also, raw milk quality based on somatic cell counts according to passage in milk payment system have gradually improved in the latter half of the year 1996, but the proportion of herd the third grade of somatic cell counts (＞500,000 cells/ml) were 33.2% and 28.2% in 1998 and 1999, respectively. The average milk hygienic quality was the highest in winter, and lowest in summer because total bacterial counts and somatic cell counts in milk were strongly influenced by seasonal factor. There were some differences of milk hygienic by regional distribution. The results suggest that application of milk payment system according to total bacterial counts and somatic cell counts of raw milk shows the more effective on improvement of raw milk quality.
