Livestock products are unique food for its assurance of safety consistent and systematic control is required relative to generic foods. In the case of harmful residues, all the world were in a very serious concern on the Belgian food’s dioxin contamination. In the case of pathogenic microorganism, E. coli O157:H7 contamination in U.S. hamburger is served as a momentum for the review and reinforcement of safety control system of food of animal origin throughout the world, and Listeria contamination in U.S sausage prompted recall measure in Korea as well as in the United States. When the FMD outbreaks were reported in the Taiwan, it caused export ban on food of animal origin, turned livestock industry into ruins and also served as a momentum for reinforcement of the control plan for exotic diseases in the neighborhood countries such as Korea and Japan. Hazards of food of animal orgin causes great loss to national economy as well as to the producers and consuments, and furthermore, the rate of hazard is increasing large scale. While some what still unsatisfied, through the unification of food control system of animal origin In July 1998 Ministry of Agriculture and Forestry is introducing and implementing the control program to ensure advaned food safety control. food safety, especially for food of animal origin, cannot be assured through simple end-products-testing. Sanitary control in each stage of food chain including primary production, slaughter, milk collection, processing, distribution, sales, and consumption (so called, farm-to-table) is required to ensure the safety of food of animal origin from the residues of harmful substances, and the multiplication of pathogenic microorganisms, so all the people involved in the food chain are required to make every efforts to ensure the safety of food throughout the food chain.
