국문 초록

본 연구는 심리학 분야에서 각광받고 있는 연구방법론인 암묵적 연관검사(Implicit Association Test: IAT)를 외식분야 연구에 적용하여 실제 외국인들의 한식에 대한 편견을 살펴볼 것이며 더 나아가 암묵적 연관검사로 측정된 암묵적 편견과 전통적 연구방법인 설문지 조사법으로 측정된 명시적 편견을 비교함으로써 보다 심층적으로 외국인의 한식에 대한 편견을 파악할 수 있을 것이다. 본 연구에서는 암묵적 연합검사(Implicit Association Test: IAT)를 통하여 외국인의 한식에 대한 편견을 측정하는데, 첫째, IAT 방법론을 이용하여 한식과 서양식에 대한 외국인의 암묵적인 편견을 측정한다. 둘째, 암묵적인 편견측정치과 명시적 편견측정치를 비교하여 그 차이를 탐구한다. 셋째, 명시적 편견과 비교한 암묵적 편견에 있어서 외국인의 출신국가별차이가 존재하는지 확인한다. 본 연구의 암묵적 편견 분석결과는 미국인과 일본인은 서양식에 대해 더욱 긍적적으로 평가하였고 중국인은 한식에 대해 더욱 긍정적으로 평가하였다. 또한 내재적 편견에 있어서 중국인은 서양식을 보다 긍정적으로 평가하고 있었고 미국인과 일본인은 한식과 서양식에 대해서 중립적인 태도를 보였다. 이에 본 연구는 한식의 세계화를 위한 단서를 제공하고, 외국인의 한식에 대한 인식을 파악하는 보다 심층적인 자료를 제공하고자 한다.

영문 초록

Implicit Association Test(IAT) is used in this study to measure the foreigners’ prejudice about Korean food, and first, IAT method is used to measure the foreigners’ implicit prejudice on Korean food and Western food. Second, the measured values of implicit and explicit prejudices are compared to investigate its difference. Third, the implicit prejudice compared with the explicit prejudice is verified to see whether there are differences between the foreigners for each native country. The results of Implicit Prejudice is that Americans and Japanese evaluated more positively on Western food, and Chinese evaluated more positively on Korean food. Moreover, explicit prejudice indicate that Chinese evaluated Western Food more positively. On the other hand, Americans and Japanese showed neutral prejudice on Korean and Western Food. Foreigners’ prejudice on Korean food is judged to become an important data not only on the policy direction of Korean food globalization, but also in the management of Korean restaurants subjected to foreigners and foreign tourists.
