미국 초등 교사들의 영양교육에 대한 태도

국문 초록

본 연구의 목적은 미국 초등 교사들의 영양교육과 관련된 태도를 살펴보고자 미국에서 행해지고 있는 초등 교사들을 대상으로 한 영양교육에 대한 태도관련 연구논문들을 문헌 분석하였다. 연구 결과 밝혀진 내용은 다음과 같다. 첫째, 미국 초등 교사들을 대상으로 한 영양교육 연수는 교실에서의 영양교육에 대한 관심과 자신감을 높이는 효과가 있는 것으로 나타났으며 특히 대학에서 행해지고 있는 연수 프로그램의 효과가 가장큰 것으로 나타났다. 둘째, 미국에서의 영양교육은 주로 다른 교과와의 통합된 형태로 가르치고 있는 것으로 나타났으며 영양교육의 성공여부는 충분한 시간의 확보와 행정적 도움, 그리고 학부모의 참여가 중요한 요인으로 작용하는 것으로 나타났다. 셋째, 미국의 초등 교사들은 자신이 직접 영양교육 교재를 고르거나 또는 스스로 영양교육 교재를 개발하는 것으로 나타났으며 학생들의 식행동을 변화시킬 수 있는 중요한 영향력을 지니고 있다고 여기는 것으로 나타났다. 넷째, 미국의 초등 교사들은 초등 영양교육의 중요성과 우선성을 인정하고 있으며 급식담당자와의 협력이 초등 영양교육의 효과를 높일 수 있다고 인식하는 것으로 나타났다. 이상의 연구결과를 토대로 제언을 하면 우선 초등 영양교육은 교사들로 하여금 실천적인 영양정보를제공하도록 구안되어야 하며, 교실에서 가르치는 영양교육과 급식에서 제공되는 음식과의 관계를 일관성 있게 가르치도록 초등 교사와 급식 제공자와의 협력관계를 구축하여야 하며, 학생들의 영양지도와 관련된 적절한 교재선정을 하도록 다양한 형태의 교재개발이 이루어져야 하고, 영양교육 실습과 학부모참여를 위한 예산이 확립되어야 비로소 효과적인 영양교육이 실시될 수 있다.

영문 초록

The purpose of this study was to analyze the American elementary teachers attitude toward nutrition education by literature review for proposing the elementary nutrition education strategy in Korea. The results of this study were as follows. School-based nutrition education should consider the needs and interests of students, teachers and the school. Educational strategies include efforts to increase health awareness, communication and skill building. Literature reviews identified strategies for nutrition education directly relevant to behavioral focus among the elements conducive to successful programs. To increase the effectiveness of nutrition education, factors such as provision of adequate time and resources, involvement of families, and incorporation of self-assessment and feedback are important. These results show that various forms of nutrition education resources and strategies are effective in nutrition education in elementary schools. However, the fact that the time devoted to nutrition education was insufficient to change the eating behavior of students emerged as a problem. Previous studies show that nutrition education can be improved through training in topics such as the application of active teaching strategies, integration of nutrition education with other subjects, and encouragement of participation of parents in nutrition education. Whether elementary teachers had taken courses relevant to nutrition was an important variable in predicting the implementation of nutrition education, and obstacles to nutrition education included lack of time, training, resources, and administrative help. In order to increase time devoted to nutrition education, the number of nutrition related courses taken in college must be increased and a coordinated training program between teachers and meal providers must be provided.
