급식산업의 역사와 발전에 대한 고찰

국문 초록

본 연구에서는 급식산업의 성장배경, 시대별 환경요인과 발전 과정을 살펴보고,향후 급식산업의 발전 방안에 대해 연구해 보고자 한다. 급식은 1950년대 외국의 지원을 받아 시작되었다. 1980년대 들어 산업의 발달과 경제성장으로 식생활에 많은 변화를 가져왔고, 급식이 성장하기 시작하였다. 1990년대 대기업 급식업체 들이 대거 등장하였고, 다양한 분야의 양적 성장과 기술제휴를 통한 질적 성장을동반하였다. 2000년대 들어서면서 급식시장은 식자재유통과 컨세션 사업, 해외진출 등 다양한 분야로 성장하면서 급식영영을 넓혀가고 있다. 당분간 국내 급식시장은 성장이 더딜 것으로 추정되나, 새로운 급식영역의 확대와 진출을 모색하는것이 바람직하다. 정부는 중‧소기업과 대기업의 격차를 해소하여 공생할 수 방법을 모색해야 한다. 또한 급식 전문 인력 양성을 위한 교육 및 지원을 뒷받침하여 급식산업 발달에 기여할 수 있도록 해야 할 것이다.

영문 초록

Reflecting rapidly changing industry trends, the current research consolidates all aspects of institutional foodservices from 1960s to these days, comprehensive overview of the institutional foodservice industry of Korea. To develop a chronological perspective of industry, the body is divided into five main parts. First part starts 1960s to 1972and second part covers from 1973 through 1979. The third part includes 1980 to 1989 and 1990 to 1999 is the forth part. The last part deals with 2000s to present. The 1980s brought many changes in eating industry as economic development increases.Mammoth institutional foodservice companies have appeared in the 1990s. Massivegrowth of these companies leads strategic alliance with other companies in various fields. As entering 2000s, institutional foodservice market extended to food distribution industry, concession-businesses, and overseas expansion in foreign markets. Training professionals and supporting systems of foodservice businesses will also be needed to continuously grow the institutional foodservice industry for the future.
