Tea ceremony, referred the act of making etiquette for tea, is able to call inherent in traditional culture with our people for the thousands of years. This study firstly examined the historical flow about our tea ceremony of good sense and of guest from beginning the era of the Three Kingdoms to reaching the late Joseon dynasty. It was defined as tea ceremonies in the broad concept and tea practices in the representative concept, which are frequently mixed in the current tea research. Tea ceremony in the women's quarters was beginning to the women's quarter in the culture, occurred at Youngnam province which is major tea plantation and consumption and established at Samnam provinces (Chungcheong-do, Jeolla- do and Kyungsang-do). The Honam tea ceremony (Ullim tea ceremony) was starting to Sunbi culture of Honam province from Dasan Chodang used the exile place of Dasan and Baekryunsa in Gangjin, Daedunsa and Ilgiam in Haenam, and Ullimsanbang in Jindo etc. The spirit of the Honam tea ceremony has been connected Dasan, Choui, Haejang, Sochi, Misan, and Uijae, followed by Dukhun and 13 people being the first generation and organized the Ullim Tea Association. They integrated their own tea practices for adjusting the Honam tea ceremony. The ceremony was formalized the tea practice in the spirit of living tea, starting to indicate love of the people and pragmatism by Dasan's mind, the idea of meditation with tea by Choui sublimated tea, idea and art to meditation, the natural and casual Namjonghoa without formal by Sochi, and Sunbi idea by Uijae. They named them as the Honam tea ceremony (Ullim tea ceremony). The Korean Tea Ceremony Culture Institute succeeded the Ullim Tea Association hands down the Ullim tea ceremony for guest, a common type of tea, and tea ceremony for Sunbi meditation, using tea leaves, powders, and don tea. One of the distinguished things on the Ullim tea ceremony compare to the others is don tea ceremony (tea ceremony for Sunbi meditation) utilized don tea, a tea native to our tradition. This is an unique tea ceremony to drink the tea alone by putting a small tea pot, for making a libation to thirsty demons, rather than a large bowl for cooling the boiled hot water. It contains emotion and taste in our people and is obvious distinct, from the Chinese and Japanese ones, which means more forcing itself to slow down and meditation than receiving guests. It is also considered that the modern tea ceremony and tea practice developed mainly for women's activity have been expanded moving into men's one. The Korean Tea Ceremony Institute rooted the spirit of Honam tea ceremony points the popularity of tea. Consequently, it chooses schooling as main business to transmit etiquette for tea culture and focuses on teaching the entrusted facilities with seniors, handicapped people, multi-ethnic families, child-care providers, and the ministry of justice.
