호텔한식조리사의 직무스트레스가 직무소진 및 이직의도에 미치는 영향

국문 초록

본 연구는 선행연구를 중심으로 호텔한식조리사의 직무스트레스(대인적 스트레스, 육체적 스트레스, 업무적 스트레스)가 직무소진 및 이직의도의 구조적 인과관계에 형성한다는 것과, 직무소진이 호텔한식조리사의 대인적 스트레스, 육체적 스트레스, 업무적 스트레스 및 이직의도 사이의 매개역할을 검증하였다. 본 연구의 표본추출은 서울, 부산, 제주, 대구, 경주, 인천 등의 지역에 위치한 15개의 5성급 호텔 및 4성급 호텔(과거 특급호텔)의 한식조리사를 대상으로 선정하였다. 예비 조사는 2023년 1월 17일부터 2월 16일까지 예비설문지 25부를 배포하여 실시하였으며, 본 조사는 2023년 3월 11일부터 4월 10일까지 30일간 실시하였다. 총 15개 호텔한식조리사에게 각각 15부씩을 배포하였고, 불성실하게 응답되었거나 누락된 항목이 있는 설문지를 제외한 202부(94.4%)가 통계 분석에 사용되었다. 수집된 자료는 SPSS(V 21.0)과 AMOS(V 21.0) 통계프로그램으로 검증하였다. 호텔한식조리사에 대한 직무스트레스는 압박이 증가하면 증가할수록 호텔한식조리사로써의 직무에 대한 소진이 높아진다는 결과와, 이렇게 높아진 직무소진의 호텔한식조리사는 직무소진이 낮은 호텔한식조리사의 소유자 보다 더 많은 이직의도를 보여 준다는 것이다. 따라서 호텔주방의 관리자는 호텔한식조리사가 겪고 있는 직무스트레스의 해결방안을 모색하여, 호텔한식조리사의 직무소진을 감소시켜 주어야 할 것이다. 이는 향후 호텔산업에 종사하는 한식조리사에 대한 인적자원관리의 방향성을 제시하는 매우 중요 가이드 안으로 형성 될 것이다.

영문 초록

This study, focusing on previous studies, found that the job stress (personal stress, physical stress, work stress) of hotel Korean food cooks forms a structural causal relationship between job burnout and turnover intention, and that job burnout is the representative of hotel Korean food cooks. The mediating role between human stress, physical stress, work stress and turnover intention was verified. To this end, the sampling of this study was selected for Korean food cooks at 15 5-star hotels and 4-star hotels (formerly five-star hotels) located in Seoul, Busan, Jeju, Daegu, Gyeongju, and Incheon. The preliminary survey was conducted by distributing 25 copies of the preliminary questionnaire from January 17 to February 16, 2023, and the main survey was conducted for 30 days from March 11 to April 10, 2023. 15 copies were distributed to a total of 15 hotel Korean food cooks, and 202 copies (94.4%) were used for statistical analysis, excluding questionnaires with insincere responses or missing items. The collected data were verified with SPSS (V 21.0) and AMOS (V 21.0) statistical programs. Through this verification, the job stress of hotel Korean food cooks was found to be higher as the pressure increased, and the burnout for the job as a hotel Korean food cook increased. shows more turnover intention than the owner of Therefore, the manager of the hotel kitchen should find a solution to the job stress experienced by the hotel Korean food cook, and reduce the burnout of the hotel Korean food cook. This will be formed as a very important guide that presents the direction of human resource management for Korean cooks engaged in the hotel industry in the future.
