『조선무쌍신식요리제법』에 기록된 대용차 고찰

국문 초록

본 연구는 1920･30년대 대용차에 관한 이해를 도모하고자 『조선무쌍신식요리제법』「차 만드는 법」의 내용 및 관련 문헌을 고찰하여 대용차 조리와 음용에 관한 지식이 근대 시기로 전승된 근거와 그 기록의 의의를 규명하는 데 목적을 두었다. 주요 연구결과를 요약하면 다음과 같다. 첫째, 이 조리서에 기술된 대용차는 주재료와 조리방법을 기준으로 화차 6가지(국화차 3가지･매화차 1가지･귤화차 1가지･계화차 1가지), 과실차 2가지(귤강차 1가지･포도차 1가지), 약재차 2가지(오매차 1가지･미삼차 1가지)로 분류할 수 있었다. 둘째, 이 조리서에 기록되어 있는 대용차 조리와 음용 방법은 조선 후기의 농서, 백과 전서, 문집, 일기 등과 같은 문헌들을 근거로 관련 내용을 탐색할 수 있었다. 셋째, 이 조리서의 대용차 관련 내용에는 차 만드는 재료의 다각적 활용 지혜, 건강과 회복을 위한 차 음용 방법 그리고 차를 통한 완상과 향기의 향유 가치가 내재되어 있어 우리의 생활문화 속에 전수되어온 지식과 경험의 종합적인 결과물로 의의를 지닌다.

영문 초록

The purpose of this study was to investigate the basis for the transmission of knowledge about the cooking and drinking of alternative teas to the 1920s and 30s and the significance of the records. For this purpose, the contents and related literatures on 『How to Make Tea』 in 『Joseonmussangsinsigyolijebeob(朝鮮無雙新式料理製法)』 written by Lee Yong-gi(1870-1933?) were reviewed. The main results are as follows. First, based on the main ingredients and cooking methods, the alternative teas recorded in this recipe book were 6 types of flower tea [3 types of Gughwacha(菊花茶), 1 type of Maehwacha(梅花茶), 1 type of tangerine flower tea(橘花茶), 1 type of Gyehwacha(桂花茶)], 2 types of fruit tea [1 type of Gyulgangcha(橘薑茶) and 1 type of grape tea(葡萄茶)] and 2 types of herbal tea [1 type of Omaecha(烏梅茶) and 1 type of Misamcha(尾蔘茶)]. Second, the cooking and drinking methods of alternative teas described in this book could be explored based on documents such as agricultural books, encyclopedias, collections of literature, and a diary from the late Joseon Dynasty. Third, The contents related to alternative teas in this book are involved in the wisdom of using tea-making ingredients in various ways, the method of drinking tea for health and recovery, and the value of enjoying appreciation and aroma through tea. This has significance as the comprehensive result of knowledge and experience passed down in our living culture.
