국문 초록

이 글은 TV 음식 프로그램에 나타난 맛 표현의 특징과 문제점을 살피고 그 대안으로서 보다 체계적인 맛 표현의 가능성을 제시하는 것을 목적으로 한다. 이를 위해 우선 TV 음식 프로그램에서 볼 수 있는 맛 표현의 실제와 그 문제점을 살펴보고, 맛 표현에 연계된 우리의 감각, 특히 미각 어휘와 기타 감각의 의미를 정리한 다음, 대안으로서 바람직한 맛 표현의 가능성과 그 스토리텔링의 실제를 제시해 볼 것이다. 맛 표현의 문제점과 관련하여 우선 우리의 맛 표현이 지나치게 몸짓, 표정, 탄성에 의존하는 문제가 있음을 보았다. 이는 맛 표현이 이루어지는 매체가 TV인 탓에 시각 청각적 전달에 치중되면서 나타나는 현상으로 보인다. 이로써 우리의 맛 표현에서 대사의 기능이 약해지고, 언어적 맛 표현이 소홀한 모습을 보인다. 우리의 풍부한 감각 어휘의 실제를 생각하면 대단히 안타까운 현실이다. 그밖에 다양한 비교와 비유의 수사적 기법도 매우 초보적으로 사용되고 있었다. 이제 보다 완성도가 높은 새로운 맛 표현의 틀을 제시해 볼 수 있을 것인 바, 이를 위해 무엇보다도 언어적 맛 표현을 강화할 필요가 있다. 다양한 감각 어휘의 체계적인 사용이 바람직할 것인데 우선 보다 객관적인 감각으로서 시각과 청각을 표현하고, 주관적인 감각인 후각, 촉각, 미각 어휘를 사용하는 것을 제안하였다. 같은 맥락에서 개별 감각의 세부적인 맛 감각을 표현하고, 이를 종합하여 정리하는 구성도 생각해 보았다. 이로써 실제 맛의 전 감각을 골고루 정확하게 표현할 수 있을 것이다. 아울러 개인적인 체험에 기초를 둔 다양한 비교와 비유의 수사를 사용할 수 있다. 비유는 특히 공감각적인 표현이나 다양한 은유를 활용하여 맛 표현의 가능성을 넓혀 줄 것이다.

영문 초록

The purpose of this article is to examine the characteristics and problems of taste expression in TV food programs and to suggest alternative storytelling of more systematic taste expressions. For this purpose, I first look at the reality of taste expressions in TV food programs and their problems. And then summarizing our senses associated with the perception of taste, I arrange the sensory languages for taste expressions. Finally I’ll present some trial expression of taste as alternative taste storytelling. The following conclusions can be drawn from this essay. First, I have seen that the taste expressions in TV food programs depend on gestures, facial expressions and nonverbal overexaggerating. This is due to the fact that the TV medium in which the expressions of taste are expressed is focused on visual and auditory communication. As a result, the verbal function in our expressions of taste is weakened, and often neglected. It does not seem to be ideal reality when we think about the possibility and indeed richness of sensory vocabulary. Now, I’d like to present a frame of new taste expressions that is more resourceful. To do this, it is necessary to strengthen the verbal expressions of taste first od all. The systematic use of various sensory vocabulary would be desirable. I emphasize the objective function of visual and auditory sense supplemented by the subjective function of smell, touch and taste. In the same context, I focus on expressing detailed sense of taste, and then individual feeling and thought about the food. This will contribute to accurately representing a whole range of taste. I also examine the effectiveness of various comparisons and rhetoric based on personal experiences. All of these will help broaden the possibility of taste expressions, especially using synesthetic expression or various metaphor.
