국문 초록

광주·전남의 음식문화는 각 지자체의 자연환경에 따라 지역의 대표 음식이 각각 다르게 나타나고 있다. 해안가의 지자체는 해산물 음식, 내륙의 지자체는 농축산물 음식이 주류를 형성하고 있다. 광주·전남의 음식 중에서 음식문화권을 형성할 정도의 것은 많지 않다. 독특한 향과 특성을 가진 돌산갓은 여수세계박람회를 통해 전국적인 음식으로 확산되었다. 조기를 말린 영광굴비는 그 이름이 옛날부터 명성이 있었고, 현재도 그 명성을 유지하고 있다. 돌산갓과 영광굴비는 그 명성과 영향력을 갖고 있는 음식으로서 음식문화권이 전국적이다. 영산포 홍어와 향신료 제피는 광주·전남에서 아주 독특한 음식문화권을 형성하고 있다. 홍어와 제피의 음식문화권은 영산강과 섬진강 유역을 중심으로 상이하게 형성되고 있다. 영산포 홍어는 독특한 맛과 수입으로 가격이 싸지면서 대중화되었고, 결혼식 피로연과 장례에서 소비되면서 그 영향력이 커졌다. 영산포 홍어와 제피는 광주·전남의 두 문화권이라고 할 수 있는 영산강 문화권과 섬진강 문화권의 음식문화권을 구분하는 대표적인 구분 지표라고 할 수 있다.

영문 초록

In the food culture of Gwangju and Jeonnam, the representative foods of the region are different depending on the natural environment of each local area. The food culture of the coastal areas is based on seafood while that of the inland areas is on agricultural and livestock products. There are not enough regional cuisines in Gwangju and Jeonnam to form food culture regions. Dolsangat (Dolsan leaf mustard) has spread its unique flavor and characteristics to nationwide through the Yeosu World Expo. Yeonggwanggulbi(a dried croaker) has won its renown since ancient times, and it still maintains its reputation. Dolsangat and Yeonggwanggulbi are foods that have its reputation and influence, and the food culture region of them is nationwide. Yeongsanpo skates and Jepi (spice) form a very unique food culture region in Gwangju and Jeonnam. The food culture regions of Skates and Jepi are formed differently around the Yeongsan River and Seomjin River basins. Yeongsanpo skates were popularized due to their unique taste and cheap prices based on imports, as they have become essentials at wedding receptions and funerals. Skates and Jepi are representative indicators of the food culture regions of the Yeongsan River and the Seomjin River basins, which are two major culture regions in Gwangju and Jeonnam.
