재래종과 비취설로 제다한 홍차의 특성 및 소비자 선호도 비교

국문 초록

본 연구는 코로나-19 이후 성장하는 세계 차 시장에서 경쟁력을 갖춘 한국의 홍차 성장을 위해 개발 중인 국내 차나무 품종인 비취설을 활용한 한국 전통 홍차 제다 후 가공 특성과 소비자 선호도 조사를 수행하였다. 성분적인 특성에 있어서 비취설이 재래종 보다 아미노산, 카페인 함량을 제외하면 전체적으로 높았다. 홍차를 즐겨마시는 재한외국인을 대상으로 선호도 조사한 결과, 맛 특성 부분에서는 재래종과 비취설 간의 유의적 차이는 없었으나 색상적인 부분에서는 보완이 필요할 것으로 평가되었으며, 이는 제다 과정에서 충분히 개선될 수 있을 것으로 사려된다.

영문 초록

This study surveyed the post-making processing characteristics and consumer preferences of traditional Korean black tea using Beachwisull, a domestic tea tree cultivar developed to grow competitive Korean black tea in the growing global tea market after COVID-19. In terms of ingredient characteristics, Beachwisull was higher overall than landrace tea, except for the free amino acid and caffeine content. As a result of a preference survey targeting foreigners residing in Korea who enjoy drinking black tea, there was no significant difference in taste characteristics between the landrace tea and Beachwisull tea. On the other hand, the color needed to be supplemented, which can be improved during the black tea manufacturing process.
