국문 초록

본 연구에서는 항산화 특성이 우수한 몰로키아 분말 3%, 6%를 첨가하여 반려동물의 기능성을 확인하고자 하였다. 몰로키아 분말을 첨가한 반려동물 브라우니의 품질특성은 pH, 색도, 일반성분을 분석하였고, 항산화 활성은 총 폴리페놀, 플라보노이드, DPPH 소거능을 확인하였다. pH는 몰로키아 6% 첨가에서 가장 높았으며, 색도 L 값은 대조구에서 높게 나타났으며, 몰로키아 분말 함량이 증가할수록 a 및 b 값이 증가하였다. 일반성분 분석 결과 몰로키아 첨가구의 지방 및 트랜스지방 함량은 대조구에 비해 낮았고, 단백질 함량은 대조구에 비해 조금 증가한 것으로 나타났다. 항산화 활성은 몰로키아 분말 6%를 첨가한 반려동물 브라우니가 폴리페놀, 플라보노이드의 함량, DPPH 소거 활성이 가장 높은 것으로 확인되었다. 이러한 결과는 몰로키아 분말 첨가가 항산화 활성과 일반성분 함량에 효과가 확인되었으므로, 향후 반려견 기능성 간식 원료에 활용할 수 있음을 시사한다.

영문 초록

This study attempted to confirm the functionality of pet dogs by adding 3% and 6% Mulukhiyah powder, which has excellent antioxidant properties. The quality characteristics of pet dog brownies added with Mulukhiyah powder were analyzed for pH, color, and general component, and antioxidant activity was confirmed for total polyphenols, flavonoids, and DPPH radical scavenging ability. The pH was the highest in the addition of Mulukhiyah at 6%, the chromaticity L values were high in the control, and the “a” and “b” values increased as the Mulukhiyah powder content expanded. The results of the general component analysis showed that the fat and trans-fat content of the Mulukhiyah-added group was lower than that of the control group, and the protein content was slightly increased compared to the control group. It was verified to have the highest contents of polyphenol, flavonoids, and DPPH radical scavenging activity in terms of antioxidant activity, pet dog brownies to which 6% Mulukhiyah powder was added. These results suggest that since the addition of Mulukhiyah powder has been confirmed to be effective in antioxidant activity and general component content, it can be used as a raw material for functional snacks for pet dogs in the future.
