북한 평양냉면에 내재한 정치성과 민족문화유산으로서 현재와 미래

국문 초록

냉면은 면, 국물, 꾸미가 만드는 손맛과 차림새와 함께 어우러지는교향곡이다. 대표작이 평양냉면이다. 평양냉면은 2018년 남북정상회담의 만찬음식으로 나오면서 남북 쪽 모두에서 화려하게 재조명되었다. 북한에서 국가비물질문화유산 제6호인 평양냉면이 가지는 남쪽과다른 차별적인 특징은 통치 차원에서 관리되고 있다는 점이다. 북한은수령들인 김일성, 김정일, 김정은에 의해 발전하고 만개하여 평양냉면의 신세기가 열렸다, 그들에 의해 인민이 평양냉면이라는 또 하나의 축복을 누리고 있다고 선전한다. 그러나 수령들이 직접 내린 평양냉면 조리법에 관한 세세한 교시가현실에서는 제대로 반영되고 있지 않다. 면이 순메밀이 아닐 뿐 아니라, 일반 주민들은 메밀이 전혀 들어있지 않은 냉면을 먹고 있다. 꾸미로 양념이 들어가는 것이 일반화되었으며, 육수에 조미료도 사용하고있다. 가장 권위가 있는 요리책의 경우에도 수령의 지도와 다르고, 서로 간에도 냉면 요리방법에 차이가 있다. 서울과 평양의 평양냉면에도 차이가 있다. 오히려 서울의 평양냉면이 북한의 수령이 요구하는 평양냉면에 더 가깝다. 음식문화도 메밀과고기 등 식재료를 충분히 확보할 수 있는 경제가 뒷받침이 될 때 보존될 수 있다. 그럼에도 평양냉면이 어떠한 특유의 모습과 맛과 멋을 담은 한 편의교향곡인가에 대해서는 공감대가 있다. 민족음식, 민족음식문화의 대표로서 평양냉면에는 변화의 원심력과 통합의 구심력이 이어질 것이다. 그 과정에서 새로운 평양냉면이 민족문화의 새로운 유산으로 탄생할 수도 있다.

영문 초록

Naengmyeon is a symphony that harmonizes with the taste and appearance of the noodles, soup, and decor. Its representative work is the Pyongyang Naengmyeon. One major characteristic that distinguishes the Pyongyang Naengmyeon, a intangible national cultural heritage number 6 in North Korea, from that of the South is that its cooking style is directly influenced and determined by the North Korean leaders. North Korea advertises that Pyongyang Naengmyeon has been re-developed and blossomed under the leadership of its leaders, Kim Il-sung, Kim Jong-il, and Kim Jong-un, heralding a new era of Pyongyang Naengmyeon, and that people have been blessed yet again with this dish the leaders have created. However, the detailed instructions on the recipe for Pyongyang Naengmyeon given by the leaders themselves are not properly reflected in reality. There are many differences between what the leaders want and what the North Korean people are actually facing. Not only is the noodles not pure buckwheat, but ordinary people eat Naengmyeon that does not contain buckwheat at all. It is common to use many sorts of spices, and synthetic flavoring matters are also used for soup. Even in the most authoritative cookbooks, the cooking methods for Pyongyang Naengmyeon differ from the instructions of the leaders, and there are differences in how to cook Pyongyang Naengmyeon between each other. There are also differences between Pyongyang Naengmyeon that is served in Seoul and in Pyongyang. Rather, the Pyongyang Naengmyeon in Seoul is closer to the Pyongyang Naengmyeon demanded by the North Korean leader. Food culture can be preserved when an economy that can secure sufficient ingredients such as buckwheat and meat is supported. Nevertheless, there is a general consensus as to how the dish should look and taste in order to harmonize and create a culinary symphony. As a representative of the national dish and national food culture, Pyongyang Naengmyeon will continue to carry the centrifugal force of change and the centripetal force of unity. In the process, a new Pyongyang Naengmyeon may be born as a new heritage of national culture.
