어린이 식생활교육의 현황과 새로운 가능성 탐색

국문 초록

이 연구의 목적은 어린이 식생활교육의 현황을 파악하고, 외국의 식생활교육 사례 조사를 통해 미각교육의 적용 가능성을 탐색하는 것이다. 이를 위해 다음과 같은 방법을 적용하였다. 첫째, 어린이 식생활교육의 현황 파악은 초등학교 2007 개정 실과 교육과정 및 2009 개정 교육과정, 선행연구에 대한 분석에 기초하였다. 둘째, 어린이 식생활교육의 새로운 가능성 탐색은 외국에서 주목받고 있는 식생활교육 사례 중 미각교육 사례를 중심으로 이루어졌다. 셋째, 미각교육의 적용 가능성 탐색을 위하여 현재 우리나라에서 진행되고 있는 미각교육의 기초적인 사례를 분석하고, 외국의 사례에서 얻은 시사점을 접목할 수 있는 방안을 강구하였다. 외국의 경우 일본은 식육기본법을 마련하여 법과 제도의 차원에서 변화를 시도하였고, 이탈리아에서는 슬로 푸드(slow food)와 스쿨 가든(school garden) 제도를 통해 식생활교육 개념의 또 다른 시각을 제시하고 있다. 교육현장의 식생활교육에서 제3의 길을 접목한 프랑스의 미각교육(sensory education)은 앞으로 우리가 나아가야 할 식생활교육에서 관심을 기울여야 할 부분이다. 우리나라 미각교육은 지금까지는 정규 교육과정에서 체계적으로 이루어지지 않고 있지만, 텃밭 교육농장, 유기농 학교 급식, 미각교육 프로그램, 초등학생용 미각교육 교재 및 지도서 개발 등의 사례를 통해 점차 확대되고 있다. 미각교육은 식재료 고유의 맛을 기억하게 하는 것으로 식재료가 처음 음식에 섞이기 이전의 맛에 대한 다양성을 경험하고 그 맛이 어떻게 변해가는 지를 알게 하는 것이다. 식재료의 고유한 맛, 자연이 내는 맛의 다양성에 대한 감각을 키워주는 것은 현재 조작된 재료와 중독된 입맛에 길들어져 있는 우리 아이들에게 스스로 식생활을 관리하는 능력을 길러주는 방안이 된다. 정규 교육과정인 실과교육이 이론과 체험 중심의 식생활교육에서 가치와 감성 중심의 미각교육으로 전환될 때 다가치적, 인간 중심적 구조를 지향하는 실과교육 목표가 실현될 수 있으며, 통합 생활교과로 자리매김할 것이다. 이를 위해 실과교과에서는 미각교육의 궁극적인 목표가 무엇이며 어떤 내용, 범주, 위계와 방법에 따라 가르치고 배울 것인가 등 식생활교육 환경 구성에 대한 구체적인 대안 마련에 나서야 할 것이다.

영문 초록

The purpose of this study is to recount dietary education in practical arts education and analyze foreign cases of dietary education to lay the foundation for setting a new direction of Korean dietary education. For this purpose, an attempt was made to investigate objectives of dietary education in practical arts education of 2007 revised educational curriculum and 2009 revised educational curriculum and analyze the contents and present state of dietary education in regular curricula at primary and secondary levels. A comparative analysis was made with foreign cases of dietary education to suggest a direction of dietary education and emphasize sensory education. As for overseas cases, Japan established the Dietary Education Basic Law in pursuit of legal and institutional changes, and Italy suggests another view of the concept of dietary education through slow food and the school garden system. Sensory education in France where educational practice has found the third way for dietary education is the part we need to pay attention to in future dietary education. Sensory education is to make one remember the unique taste of ingredients, experience diverse tastes of those ingredients before they are first mixed into food, and understand how those tastes go through changes. The efforts to promote senses for the unique taste of ingredients and a variety of natural tastes can allow children currently accustomed to manipulated ingredients and addictive tastes to be more competent in dietary management. If practical arts education in the regular curriculum makes a shift from theory- and experience-based dietary education to value- and sensitivity-based sensory education, it can attain the objective of practical arts education that pursues a multi-value, human-centered structure, which will then be settled as an integrated living subject. To do this, the subject of practical arts education needs to make efforts to create dietary education environment in terms of the ultimate objective of sensory education and its contents, categories, hierarchy, and methodology for teaching and learning.
