영문 초록

This study aims to determine what effect manufacturing strategy of production kitchens in the hotel industry have on their manufacturing performance in terms of competition with others. The results of this study are listed in the following. First, it is found that the types of management strategies in the hotel industry have a positive effect on production kitchens' manufacturing strategies. Second, the management strategies in the hotel industry are also significant for manufacturing performance at the significance level of p<.001. Lastly, production kitchens' manufacturing strategies have a positive impact as well at the significance level of p<.001. As a result, the hypothesis has been safely adopted. In other words, it is analyzed that there is a high level of correlation among the hotel industry's strategies, subordinate strategies, and performances, which requires people to have a value chain mind when they set up strategy plans. Moreover, since production kitchens' manufacturing strategy types have a direct and/or indirect effect on manufacturing performance, it is important for managers to make decisions to choose their strategies depending upon situational factors. The limits of this study include the fact that it has selected and researched the basic strategy variables of a manufacturing system only, which calls for future research to be developed from the perspective of such activities as accomplish manufacturing strategies.
