식품안전에 기반한 통합적 요리활동이 유아의 식품안전에 대한 개념 및 태도 형성에 미치는 영향

국문 초록

본 연구는 식품안전에 기반을 둔 통합적 요리활동 프로그램을 개발하여 적용함으로써 유아기부터 식품안전에 대한 관심을 증진시키고 일상생활에서 식품안전에 관한 구체적 습관을 형성하고 실천하려는 의지를 가지도록 하기 위해 수행되었다. 본 연구의 대상은 D시 ○○유치원 만 5세 유아 30명과 학부모 6명이며, 유아 대상으로 개념도 작성을 통해 식품안전에 대한 개념이 형성을 살펴보았으며 학부모 대상으로 포커스그룹 인터뷰를 통해 유아들의 식품안전에 대한 태도변화를 탐색하였다. 유아들의 식품안전에 대한 개념형성의 경우 사전에는 단순히 몸에 좋고 나쁜 것으로 인식 되었던 것이 사후에는 왜, 무엇이, 어떻게 좋고 나쁜 것인지와 재배방법, 생산과정, 유통과정, 조리법 등의 식품안전에 대한 지식이 증가 되었고 이에 따른 개념 형성이 확인되었다. 또한 식품안전에 대한 태도변화측면에서는 식품안전에 대한 관심이 높아졌으며, 편식이 감소하였고 식품에 대한 자기 조절력이 생기고 실천력이 증가하였다. 결론적으로 식품안전을 기초로 유아들이 직접 체험하고 경험할 수 있도록 계획된 통합적 요리활동 프로그램은 유아들로 하여금 식품안전에 대한 개념을 심어주며 태도변화를 가져온 것으로 볼 수 있다.

영문 초록

This study examines the effects of integrated cooking activities on children s understanding of and attitudes toward food safety. Thirty five-year-old children took part in the integrated cooking program. Further, for the second research question, six parents were asked to acquire information regarding their children s attitudes toward food safety. Data were collected for this study by analyzing conceptual diagrams drawn by the children and through group interviews with their parents. Subjects such as ingredients, distribution, additives, and the amount of trans fat created while cooing were categorized in order to gauge children s acquisition of knowledge. Toward the program s end, however, the children developed a more thorough understanding of foods, ingredients, names, and other details rather than classifying foods as either ‘good’ or ‘bad’ food, which was the primary goal of this research. Second, the results gathered from group interviews revealed that the children applied self-control over in the consumption of popular foods such as sodas, candies, chocolates, biscuits, ice cream, and fried food. Instead, they consumed vegetables with strong scents and raw foods without objection, indicating that their attitudes toward healthy foods have improved.
