유치원 적정 급식단가 산정에 관한 연구

국문 초록

본 연구는 A광역시의 238개 유치원을 대상으로 1식당 적정 급식비를 추정하였다. 이를 위해 표준식단 산정가를 적정 급식비 산정모형에 반영하였으며, 유치원 급식비 원가에 영향을 미치는 요인들을 고려하였다. 분석 결과는 다음과 같다. 첫째, 유치원 급식비에 가장 큰 영향을 미친 요인은 식품비였으며, 다음으로 설립유형(공사립), 급식 운영형태(직영 또는 외부운반), 급식 인원수 등으로 나타났다. 다른 조건이 일정할 때, 사립 유치원은 공립 유치원보다 급식비가 1,000원 가량 높고, 직영급식이 외부운반급식 형태보다 단위당 급식비가 높은 것으로 나타났다. 또한 급식인원 100명당 200원 가량의 급식단가가 낮아지는 것으로 확인되었다. 교실 배식과 식생활관 배식은 단위당 급식비가 병행급식보다 높았지만 통계적으로 유의하지 않았다. 조리 인원수는 1인당 급식비에 미치는 영향이 통계적으로 유의하지 않았다. 본 논문은 유치원 급식 비용의 결정요인을 이해하는 데 도움을 줄 수 있으며, 연구 결과를 토대로 유치원 급식비를 차등 지원할 수 있는 근거로 활용할 수 있을 것이다.

영문 초록

This study estimated the ideal meal costs per serving (or meal costs per menu) using the data from 238 kindergartens in A city. To that end, the food costs for standardized menus were reflected in the optimal meal costs calculation model, and factors affecting the costs of kindergarten meals were considered. The main findings are as follows: First, food costs were the main factor that affected kindergarten meal costs and were followed by the type of kindergarten(public or private), meal operation method(direct or external transportation), and the number of kids having meals. Ceteris Paribus, the meal price of private kindergartens was 1,000 won higher than that of the public kindergartens. Also, the price of the meals per menu was higher when managed by the kindergarten comparing to the external transportation method. In addition, it turned out that the unit price of meal was 200 won cheaper per 100 kids. The serving method(in classroom or in cafeteria) and the number of cooks had no statistical significance on the meal costs. This study can help understand the determinants of kindergarten meal costs and can be used as a basis for differential support for kindergarten meal costs.
