국문 초록

중국 어느 길가에서나 흔하게 만날 수 있는 란주소고기라면(蘭州牛肉拉麵)은 중국에서 가장 유명한 면요리 중 하나로 란주 지역의 대표적인 회족(回族) 음식이다. 한국의 인스턴트식 라면과 달리, 회족식 터번을 두른 회족들이 면반죽을 나무 테이블에 두들겨가며 즉석에서 수타면을 뽑아 소고기 국물에 삶아내는 면요리로, 가격이 저렴하면서도 담백하고 깔끔한 맛, 풍부한 영양이 특징이다. 본고는 란주 소고기 라면을 단순한 음식이 아닌 역사적 문화적 배경을 가진 문화콘텐츠 원형의 사례로 보고 그 역사적 문화적 배경을 살피고 그 콘텐츠적 의미와 가치를 재조명하는 데 목적을 두고 있다. 중국 북서부, 고대 실크로드가 시작되는 길목에 사막지역, 고원지대, 황하강유역, 드넓은 평야지대 등을 모두 가진 감숙(甘肅)성은 지정학적 위치상 다민족, 다문화 지역이자 가장 다양한 음식문화가 공생하는 지역이고, 감숙성의 수도 란주(蘭州)에서는 고원 사막지역의 목축문화, 풍부한 수원 덕에 발달된 농경문화, 건조한 중국북방의 기후에서 비롯된 면 요리문화에, 돼지고기를 먹지 않고 소고기를 즐기는 이슬람권 문화까지 어우러져 란주 소고기라면이 탄생되었다. 란주 소고기라면은 2012년 기준으로 정식 전문점만 5만개 이상,통계화된 매출만 3조원에 넘는 중국 음식 시장의 중요 콘텐츠이다. 그러나 지금까지 란주 소고기라면에 대한 연구나 논문들은 대부분 그 제조 기술과 경영학 위주로만 다뤄졌을 뿐, 콘텐츠적 시각에서는 다뤄지지 못했다. 점차 문화콘텐츠 시대로 변해가고 있는 지금, 우리는 더 이상 기술과 경영의 측면만으로 란주 소고기 라면을 바라볼 것이 아니라, 문화적 역사적 지리적 종교적으로 독특하고 고유한 음식문화콘텐츠 원형이라는 관점에서 다양한 콘텐츠적 층위들을 복합적으로 살펴볼 필요가 있겠다.

영문 초록

On any street in any city at China, you can find a Lanzhou beef noodlestore, in where Hui nationality chef is wearing Islamic cap and makinghand-made noodles to serve Lanzhou beef noodle soup. This study iswritten for looking into Lanzhou beef noodle soup as the perspective ofcultural contents. Lanzhou beef noodle soup is one of the most famousChinese food, especially in the northen area of China because of theirextremely cold and dry weather. Gansu Province, as an important path ofthe ancient Silk road, has had diverse culture from Isram countries, fromEuropean countries, and also from China. The province also has variety offood culture of Muslims who don’t eat pork because of the Koran, andGansu’s agricultural and ranching culture that people raise yaks and sheepinstead of normal cows and goats, is dissimilar in most China area. Lanzhoubeef noodle soup is not just a bowl of noodle soup, it’s the symbol ofLanzhou and Gansu’s culture and the symbol of Hui national people, whoare one of the Chinese 55 minority nationality people, and are also calledas ‘Chineselized Muslims’. So far, the study of Lanzhou beef noodle soup isonly focused on the manufacturing technology and its financial management. However, it should be known its worthy as a very important cultural contentprototype, which has an enormous and vast possibility as a cultural contentthat can lead so many derivative cultural contents. Therefore, it should befocused on not only in a technical and business perspective, and also in afood culture, tourism, localizaiton, and the sustainable ecological system ofcultural contents to meet the diverse demands of consumers.
