영문 초록

Surveying restaurant cooks of deluxe hotels in Seoul, this study investigated the current status of cooking wine management, selection factors of cooking wines and the relationship between selection factors and overall satisfaction of using cooking wines. Results of study revealed that respondents considered four factors when they select cooking wines such as wine quality & pairing with foods, kitchen staff's opinion, wine information, and opinion of purchasing department & wine cost. Wine quality & pairing with foods turned out to influence on the overall satisfaction of using cooking wines most, followed by kitchen staff's opinion, and opinion of purchasing department & wine cost. The study concludes with the implications of the results and suggest future research topics.
