스리랑카산 지대 및 등급별 홍차류의 카테킨 성분 분석

국문 초록

스리랑카에서 생산되는 홍차류의 등급별(OP, P, FBOP, BOP) 및 지대별(고지대, 중지대, 저지대) catechin류의 함량 및 조성에 대한 정보를 얻고자 HPLC를 사용하여 정량 분석을 실시하였다. 또한 독특한 향미를 가지는 고지대 우바 홍차류의 P, FBOP, BOPsp 및 FFsp 등급별 catechin류도 분석하였다. 지대별로 OP 등급에서는 지대가 낮아질수록 총 catechins의 함량이 감소하였으며, P 등급에서는 고지대의 총 catechins 함량이 중지대와 저지대에 비해 두 배 이상 높았고, 중지대와 저지대에서는 거의 동량 함유되어 있었다. FBOP 등급에서는 고지대의 총 catechins 함량이 현저하게 높았으며, BOP 등급에서는 고지대와 저지대의 총 catechins 함량이 거의 동일하고 중지대에서는 적게 나타났다. OP등급을 제외한 모든 등급의 고지대 홍차류에서 EGC가 가장 많이 함유되어 있었고, 중지대 및 저지대에서는 ECG 함유량이 가장 많았다. 우바 홍차류의 등급별 catechin류 함량은 pekoe에서 총 catechins 함량이 높았고 broken된 나머지 시료에서는 비슷한 함량을 나타냄을 알 수 있었으며, 모든 등급에서 EGCG 및 ECG 함유량이 가장 높음을 확인하였다.

영문 초록

Quantitative analysis using HPLC was carried out to obtain information on the content and composition of catechins in the grades (orange pekoe, pekoe, flowery broken orange pekoe, and broken orange pekoe) and regions (highland, middle, and lowland) produced in Sri Lanka. The catechins of P, FBOP, BOPsp, and FFsp grades of highland Uva teas with unique flavors were also analyzed. In the OP region, the total catechins decreased as the region was lower. In the P grade, the total catechins in the highlands were more than double those in the middle and lowlands, and similar in the middle and lowlands. In the FBOP grade, the total catechin content in the highlands was significantly higher, whereas, in the BOP grade, the total catechin content in the highlands and lowlands was similar, but not in the middle regions. All of the high-grade black teas except for OP grade contained the highest epigallocatechin, and the middle and lowland contained the highest epicatechin gallate content. The catechin content of Uva black tea was higher in pekoe and similar in the remainder of the broken samples.
