영문 초록

The issue of health in diet has been one of the major concerns in consumer food demand. The purpose of this study is to explore how the consumer’s nutrient intake responds to the economic variables such as the price and consumer expenditure. This study adopts a methodology developed in the previous literature to measure changes in nutrient availability as the demand for food items changes. The quarterly ordinary demand system in the form of the first differential approximation is consturcted under the assumptions of weak separability and two stage budgeting. The empirical model is estimated by SUR(Seemingly Unrelated Regression) considering the contemporaneous correlation among the equations of the demand system. And then the elasticities of the nutritional content of the diet are inferred from the estimated elasticities of the ordinary demand system. The empirical results show that all of eight nutrient intakes from meat consumption(food energy, protein, fat, cholesterol, calcium, phosphorus, potassium, sodium) are negatively related to the meat prices. Consumption of the eight nutrients from meat is more sensitive to changes in pork price, less sensitive to beef price, and least sensitive to broiler price. All eight of consumer’s nutrient intakes positively respond to the per capita meat expenditure. The income elasticities of protein, cholestrol, potassium, sodium are relatively higher than those of other nutrients. This study provides with a useful piece of information in the effects of food price policy on consumer’s nutrient intakes.
