국문 초록

본 연구의 목적은 학교기업 커피전문점 ‘카페 하이유’를 설치․운영하고 있는 서울 소재 H여자대학교를 대상으로 연구를 실시함으로써 학교기업의 실질적인 운영방법 제시 및 발전적인 경영성공을 위한 실무적 운영자료로 활용되고자 하였다. 본 연구에서는 이러한 연구목적을 수행하기 위해 학교기업 설치과정을 조사하고, 첫째, 학교기업 커피전문점의 운영에 대해 분석하고, 둘째, 커피전문점에 대한 만족 및 개선방안을 도출하기 위해 2017년 6월 8일∼10일까지(3일간) 고객 10명을 대상으로 심층면접을 실시하여 분석하였다. 이를 토대로 학교기업의 설치과정을 제시하였으며, 연구결과로 첫째, 학교기업 ‘카페 하이유’의 운영 분석을 자원 및 인력관리, 마케팅 및 홍보 관리, 메뉴관리 및 운영분석을 제시하였다. 둘째, 심층면접 실시 결과 학교기업 ‘카페 하이유’의 만족 요인은 서비스 만족, 커피 품질 신뢰의 2가지요인, 교외 커피전문점과 비교분석은 저렴한 가격, 접근성 용이, 고급스러운 분위기, 다양한 메뉴 제공의 4가지 요인, 개선방안으로는 학교 학생 혜택 확대, 레시피 표준화 및 신규 음료 개발, 홍보 확대의 3가지 요인으로 분류하여 제시하였다. 본 연구의 시사점은 학교기업 설립과정을 제시하고 실제적인 운영분석 및 개선방안을 토대로 향후 학교기업 관련 사업에 도움을 줄 수 있다는데 의의가 있다.

영문 초록

This study aims at looking into the case of “Cafe HWYU” in a women’s university in Seoul, thus providing practical guidelines on operation of a School Based Enterprise (SBE) and showcasing business practices for successful, forward-looking management. With this in mind, we investigated the process of establishing the SBE before analysing the operation of the coffee shop as SBE. Second, an in-depth interview was conducted to a sample of ten customers during the three days from June 8th to 10th in 2017 so as to identify how to draw and improve customer satisfaction at the coffee shop. Based on that analysis, a model of the SBE establishment could be proposed. As a result, the operation of Cafe HYWU was analyzed from the perspectives of human and other resource management, marketing and promotion management, menu management and operation analysis. Second, the result of the interview shows that the satisfaction factors of the cafe are service satisfaction and the quality of the coffee and it is outpacing other coffee shops outside the campus in affordable prices, accessibility, upscale ambience and a variety of menus. It also recommends that the SBE may improve by adding more benefits to the students, standardizing recipe coupled with developing new beverages and carrying out more promotional activities. It is expected that the process of establishing the SBE and practical operation analysis followed by recommendations shown in this study would benefit the businesses related with the SBE in the future.
