청동기시대 갈돌·갈판의 사용흔 및 잔존 녹말 분석

국문 초록

본고에서는 최근 농경을 설명하기 위한 새로운 방법으로 부각되고 있는 사용흔 분석과 잔존 녹말 분석을 행하여 청동기시대 갈돌·갈판의 기능과 성격에 대하여 살펴보았다. 본격적인 분석에 앞서 우선 형태적인 검토를 통하여 청동기시대의 전반적인 변 화상을 파악하였다. 그 결과 갈돌의 경우 전기에 마봉이 다수를 차지하다가 후기가 되면서 마석의 증가 양상이 관찰된다. 그리고 이러한 갈돌 형식의 상대적 다양성에 비해, 갈판은 모든 지역에서 시기적으로 크게 변하지 않고 유사한 형식이 이용된 것으로 확인된다. 사용흔 및 잔존 녹말 분석을 통해서는 갈돌·갈판의 기능과 용도가 상정된다. 우선 갈돌 가운데 마봉은 주로 벼과 식물의 탈곡·제분 시 사용되지만, 이밖에 다양한 종류의 식물 가공에도 이용된다. 마석의 경우 마모면이 있는 형식과 오목한 고타흔이 형성 된 형식 사이에 차이점이 확인된다. 전자를 이용한 작업으로는 견과류 으깨기, 콩 종류의 조리, 고사리의 녹말 채취 등이 상정되며, 후자에 대해서는 견과류의 껍질을 벗기거나 부수는 작업과 함께 석기 제작에 이용되었을 가능성도 짐작된다. 한편 갈판은 정연한 형태의 형식이 한정된 기능을 갖는 데 반해, 그렇지 않은 형식의 경우 도토리류의 가공을 포함하여 비교적 다용도로 사용되었을 가능성이 높다. 지금까지 선사시대 농경에 대해서는 출토 종자, 농경 도구, 농경 관련 유구 등의 생산 기술적인 측면에서의 설명이 주를 이루어 왔다. 이와 달리 식료 가공 기술이라는 시점은 대상 자료가 부족하기 때문에 그다지 주목받지 못하고 있는 실정이다. 따라서 이 번에 시도한 갈돌·갈판의 연구는 청동기시대 농경에 대한 다른 측면에서의 접근을 가능하게 한다. 특히 기존에 이루어진 전통적 방식의 농경 연구와 본고의 분석 결과를 조합함으로써, 청동기시대 농경에 대한 새로운 시점을 제공할 수 있을 것이다.

영문 초록

This article discusses the functions and characters of mortars and pestles in the Korean Bronze Age, by the analysis of use-ware and starch residues on these tools. Firstly, the authors made chronological order of these stone tools, which tells that two-hands used type shows high percentage in the Early Bronze Age, while one-hand used type is higher in the Late Bronze Age. Contrastingly, flat shaped mortars shows no change according to their chronological stage. Secondly, the function of these tools was investigated by the analysis of use-ware and starch residues on them. Two-hands used type supposed to be used for dehusking and flouring of poaceous crops, as well as processing of various type of plants. As for one-hand used type, there are two kinds, one with grinded parts and one with traces of percussion. The functions of the former appear to be grinding of nuts, beans and root vegetables, while that of the latter seem to be breaking the nuts' shell, although they also can be used for stone-tool making. While uniformly-sized flat shaped mortars had specified function, others had various functions such as nuts processing. Previous studies on prehistoric agriculture concentrated on explaining the technical aspects of food production, mainly by the analysis for unearthened seeds, tools and archaeological features related to farming. This paper provides a new point of view, food processing technique, which enable us to study agriculture in Korean Bronze Age from a different perspective. Studies for prehistoric agriculture should be proceeded by integrating these two perspectives.
