국문 초록

화과자(和菓子:와가시)라는 명칭은 양과자문화가 유입된 1900년대 말 메이지(明治)시대에 회자되었다. 현재의 과자(菓子)는 중국에서 전해진 당과자에서 출발했으며 이것은 자연식품에서 가공식품으로 변화를 도모한 음식 개혁이라 할 수 있다. 당과자 제조법은 화과자 역사의 초석을 다지고 점심 문화는 다도 번영과 함께 과자 발달을 촉진시키며 화과자 역사의 토대를 만들었다. 화과자의 원류가 되는 차과자의 필요성이 대두된 것도 점심 시대이다. 이후, 남만과자 시대가 열리고 설탕이 유입되는 1800년대 오늘날의 화과자 모습이 형성되었다. 일본 전통문화의 하나인 화과자는 사계절의 변화에 따라서, 세시풍속과 더불어 여러 가지 의례와 깊은 유대를 갖고 발전해왔다. 또한, 일본의 화과자 문화가 형성되는 과정을 보면 차문화와 불가분의 관계가 있다는 것을 알 수 있다.

영문 초록

The term ‘Wagashi’ (和菓子) gained popularity during the Meiji era in the late 19th century, coinciding with the introduction of Western confectionery culture to Japan. Today's Wagashi originated from Chinese sweets known as ‘Togashi’ (唐菓子), representing a significant shift from natural to processed foods. The recipes for Chinese sweets laid the foundation for the history of Wagashi, and the lunch culture of the time fostered the development of confectionery alongside the prosperity of the tea ceremony. It was during this era that the need for 'Chagashi' (茶菓子), original Japanese confectionery, arose. In the 1800s, the Nanbanggashi (南蛮菓子) era began, introducing sugar to the influx. It was during this period that the style of Wagashi as we know it today began to take shape. As one of Japan's traditional cultures, Wagashi has evolved in tandem with the changing seasons, establishing strong connections with seasonal customs and various rituals. Furthermore, the development of Japanese Wagashi culture is intricately linked to tea culture.
