『음선정요(飮膳正要)』에 나타난 원나라의 차문화 연구

국문 초록

원대의 차 관련 내용은 농서류 및 음식관련 문헌 등에 산발적으로 나타난다. 그 중에서 『음선정요』 권2의「제반탕전」에 나타난 생소하고 다양한 16가지 이상의 차들을 여섯 카테고리로 분류하여 분석하였다. 첫째, 탕으로 표현되는 말차류, 둘째 가루 내지 않고 맑게 끓이는 ‘청차’류, 셋째 새로운 종류의 차 및 전통차류를 동시에 생산하는 사천차, 넷째 대용차류, 다섯째 다양한 재료 및 향신료를 배합하는 차류, 여섯째 원대 차문화의 독특성을상징하는 수유차류이다. 이를 통해 원대에 ‘차’의 이용은 기존 범주보다 훨씬 넓어지고 의미 또한 확대되었음을알 수 있다. 이는 기후변화 및 전염병 창궐이라는 시대적 영향요인에 의해 원대만의 독특한 ‘약선차문화’를 형성하는 과정에 나타난 것이다. 특히 각 민족마다 음식습관과 각지의 재료들이 차문화에 융합되어 끓이고 볶는 등다양한 이용방식은 후대 초청차와 포다법의 촉매 역할을 하였고, 홍차 및 훈향방식의 화차 제다에도 큰 영향을주었다.

영문 초록

Descriptions and contents on tea in the Yuan era randomly appear in the documents and books of agriculture and food. This study analyzed teas in the Yuan era and categorized them into six types. There were more than 16 kinds of distinctive teas in the Yuan era. All of them appeared in ZhubanTangjian, the second chapter of YinShanZhengyao, a documentation of the imperial food culture in the Yuan dynasty. The six tea types that appeared in this book are listed as follows. Firstly, matcha (powdered tea) appeared as ‘tang’. Secondly, “clear tea” prepared by boiling without powdering. Thirdly, governmental types of tea in the particular area of Sichuan. Fourthly, alternative tea varieties. Fifthly, tea combined with various ingredients and herbs. Sixthly, the buttered-tea type, which represents the uniqueness of the tea culture in the Yuan era. It is confirmed with this analysis that the utilization of tea in the Yuan era was wider in contrast to the previous categorization. The analysis also expanded the meaning of tea utilization in the Yuan era. The phenomenon of forming pharmaceutical tea during climate change and pandemics also appeared in the Yuan era. The analysis revealed that various ways of tea utilization influenced the production of black tea and flower tea (prepared by flavoring the tea with flowers). Tea utilization represents each nation’s dietary custom in which numerous ingredients of local regions were fused with tea by boiling or roasting together. Tea utilization also played the role of a catalyst developing later tea brewing methods.
