발효정도에 따른 차 제품의 색상관련 특성의 변화

국문 초록

찻잎을 다양한 일광위조 및 실내위조를 처리한 후 발효정도가 다양한 차 제품을 만들어 차표면 색상관련 특성의 변화로 발효정도를 추정할 수 있는 요인(지표)을 설정하고자 실험을 수행하였다. 위조진행에 따른 발효정도는 CIE color system과 Hunter color system에서 색상관련 특성의 변화가 비슷한 경향을 보였으며, a값과 a/b값의 처리별 변이정도가 배우 컸다. 위조단계별 차제품의 색상관련 형질들은 처리별 평균치가 고도의 유의적인 차이가 있었다. CIE color scale과 Hunter color scale에서 색상관련 특성인 L, a, b, a/b 값간에 서로 고도의 유의적인 상관관계를 보였으며, 발효정도(X9)의 변이성을 Hunter color scale의 a/b값으로 99.8% 설명될 수 있어, a/b값은 차제품의 발효정도를 추정하는데 매우 유용한 형질(지표)로 이용될 수 있다.

영문 초록

To establish basic criteria for measuring fermentation degree in tea products, the differently withered tea products were made and surface colors of them were measured with a spectrophotometer. The CIE L*a*b* and Hunter Lab color scales were compared. The values of L, a, b and a/b between CIE and Hunter color scales showed similar increment or decrement with differently withered tea products. The coefficients of variation for a and a/b values were the greatest with 113.3% in experiment 1, and 57.7~59.3% in experiment 2, respectively. The mean squares for traits related to color scale in the differently withered tea products were highly significant, and the differences of a and a/b values according to differently withered tea products were remarkably great. The a/b ratio in differently fermented tea products accounted for about 99.8% of the variation in fermentation degree, indicating that the a/b ratio is a very useful trait for assessing fermentation degree.
