국문 초록

소금은 인류의 출현과 역사를 함께 한 식품으로서 원료가 일부 지역에 국한된 상태로 존재하며, 일반인이 생활을 영위하기 위해서라면 일정량 이상을 반드시 섭취해야 하는 특성상 내륙 깊은 곳까지 운반되어야 했기 때문에 지리적인 양상을 다분 함축하고 있다. 미국 남부에 자리한 루이지애나주의 제염업은 시기별로 다양한 역사지리적 측면을 반영하며 역동적으로 전개되었다. 원주민은 서리소금을 획득해 사용하였고, 강렬한 태양열에 농축된 염수를 노출시키거나 스페인과 프랑스에서 건너간 초기 개척민이 그러했듯이 지역 북서부 레드강 유역에 분포하는 염정에서 확보한 염수를 가열해 소금을 생산하였다. 흥미롭게도 가열 할 때 사용한 토부는 굴껍질과 흙을 배합해 제작하였다. 남북전쟁을 거치면서 에이버리섬에 매장된 일부를 포함해 내륙과 연해에 산재한 암염의 존재가 밝혀지는 한편 디젤궤도차량 및 폭약을 위시한 새로운 장비가 개발되면서 대량생산의 시대가 열린다. 현재 소금은 루이지애나주 화학공업의 중요한 원료로 사용되고 있다.

영문 초록

Salt has been a dietary mainstay, the making of which displays a long history comparable to that of human civilization. Given that the mineral resource is buried at limited number of sites and needs to be transported where it deems necessary to sustain the physiological requirement of people, salt connotes various geohistorical implications. The salt making in the State of Louisiana up until the first half of the 20th century had experienced a dramatic transformation. At the outset, Native Americans and the Spanish and French pioneers procured salt through boiling up the brine from salines. Then the salt industry got at the turning point during the Civil War with the discovery of the rock salt at Avery Island and nearby four other sites. Driven by the development of explosives and electric trains the mass production of salt was made possible. Salt mining has endured for an extracted period of time and now prospers in association with Louisiana's chemical industry.
