저장기간에 따른 녹차와 보이차의 성분 변화 연구

국문 초록

본 연구는 녹차와 보이차가 장기간 보관 되었을 때 성분함량의 변화가 어떻게 일어나며 색, 향, 미에 어떠한 영향을 미치는가를 고찰하였다. 녹차는 상온에서 보관해온 녹차를 저장기간 별로 5종류 선정하였고 보이차는 상온에서 보관해 온 보이차를 제다방법, 저장기간이 다른 것으로 5종류 선정하였다. 실험 방법은 카테킨, 카페인, 아미노산, 비타민C, 클로로필의 성분함량을 HPLC방법으로 분석 비교하였다. 그 결과 저장기간에 따른 성분함량 변화는 후발효기간이 긴 보이차가 녹차보다 그 변화가 많았고, 같은 기간 보관한 보이차를 비교하였을 때 숙병의 함량 감소가 현격하다. 그러나 기호식품이므로 맛에 있어서 개인의 기호에 따라 보이차, 녹차의 선택의 여지가 있으며 저장기간이 오래된 녹차의 다방면의 이용가치가 충분하다.

영문 초록

The purpose of this study is going on color, aroma, flavor affect how the changes in the chemical composition occurs when the tea was stored for a long time, sample green tea, green tea has been kept at room temperature storage period were selected by five kinds, five kinds of different storage periods were chosen. The main ingredient of tea catechins, caffeine, amino acids, vitamin C, chlorophyll Ingredients for the experimental method were analyzed with HPLC method. As a result, the ingredient changes by the storage periods. Especially the puer tea, which has a long after-fermentation period, has more ingredient changes than green tea. In addition, among the puer tea, Sukbyeong has much more decreases of ingredient if storage periods were same. However, green tea and puer tea are favorite food, so that people can choose the tea by their personal preferences in taste. Also the green tea that has a long storage period has an enough value in many ways.
