누리과정 적용을 위한 요리활동 분석 연구

국문 초록

본 연구는 누리과정 3, 4, 5세 교사용 지도서에서 제시된 요리활동의 연령별 편성, 제시된누리과정 관련요서, 조리방법을 분석하고자 한다. 이를 위하여 누리과정 교사용 지도서에제시된 67개 활동을 분석하였으며, 연령별로 활동이 어떠한지와 누리과정 관련요소를 분석하고 각 활동에서 제시된 조리방법을 분석하였다. 연구결과 첫째, 연령별 요리활동이 4세 누리과정 교사용 지도서에 가장 많은 수이 활동이 제시되었다. 둘째, 누리과정 관련요소는 주로 신체운동영역, 사회관계영역, 자연탐구영역의 목표와 내용으로 구성되어 있었다. 또한자연탐구영역이 내용범주 중 과학적 탐구하기의 내용인 물체와 물질 알아보기가 가장 많은것으로 나타났으며 다음으로 과학적 탐구하기의 간단한 도구와 기계 활용하기가 많았다. 셋째, 요리활동에 나타난 조리방법은 비가열 조리방법이 주로 사용되었는데 그 중 섞기와 자르기, 빚기 순으로 많이 사용되었다. 본 연구결과를 바탕으로 교실에서 보다 나은 요리활동을 계획하고 실행하기 위한 기초 자료로 활용될 수 있을 것이다.

영문 초록

The purpose of this study is to analyze the culinary activities presented in the Teacher'sGuidebooks for children aged 3, 4, and 5 in the Nuri Curriculum. To do this study , the67 activities presented in the Nuri Curriculum Teacher's Guidebooks were analyzed, theactivities were analyzed by age and the ingredients related to the Nuri process, and thecooking methods presented in each activity were analyzed. First, the study showed thatage-specific culinary activities were the largest number of activities in the 4-year-oldNuri Teacher's Guidebooks. Second, the Nuri process-related elements consisted mainlyof the goals and contents of the physical exercise area, the social relations area, and thenatural exploration area. In addition, natural exploration areas showed the largest numberof objects and substances to explore scientifically during the content range, followed bymany simple tools and machines for scientific exploration. Third, the cooking methodshown in the culinary activity was mainly used as a non-heat cooking method, of whichmixing and cutting, in order of making was used a lot. Based on the results of this study,it will be used as a foundational resource for planning and implementing better cookingactivities in the classroom.
