국문 초록

우리나라 남,서해안 및 중국의 발해만에 서식하는 1년생 갑각류인 대하를 시료로 택하여 성별(숫컷, 암 컷), 부위별(중장선, 근육, 혈액, 생식선, 기타)로 나누어 지질의 종류와 지방산의 조성을 비교, 검토한 결과는 다음과 같았다. 1. 대하는 총 지질의 40% 이상을 중장선에 함유하여 중장선이 지질의 저장기관의 역할을 하는 것으로 보였다. 2. 성별, 부위별로 지질의 분포를 검토한 결과, 중장선에는 triglyceride를, 근육과 혈액 그리고 생식선에는 cholesterol을 각각 주로 함유하였으며, 각 부위에는 극성 지질 중 주로 phosphatidyl choline을 많이 함유하고 있었다. 3. 각 부위에 함유되고 있는 지질 중, 극성 지질과 비극성 지질의 함량비를 검토한 결과, 중장선에는 20:80으로 비극성 지질이 높았고, 생식선에는 50:50으로 같았으며, 근육과 혈액 그리고 기타 부위에는 극성 지질이 다소 높은 비율로 함유되어 있었다. 4. 극성 지질과 비극성 지질을 구성하는 공통적인 주요 지방산은 16:0, 18:1, 20:5n-3, 22:6n-3 및 18:2n-6산이었으며, 포화 지방산이나 monoene산 보다 polyene산을 많이 함유하는 경향이었다.

영문 초록

Oriental shrimp, Penaeus orientalis, was taken as a crustacea sample and the composition of lipid and fatty acid were determined. Total lipids extracts from oriental shrimp were fractionated into two lipid classes of non polar lipid(NL) and polar lipid(PL) by sep-pack column chromatography. The lipid composition of the lipid classes were determined by TLC-FID system. The fatty acid composition of non polar and polar lipid were analyzed by gas liquid chromatography. The compositions of lipid and fatty acid in the both sexes and in body portions were resulted in followings. 1. More than 40% of total lipid have been contained in the hepatopancreas, therefore hepatopancreas was seemed to be the major organ of lipid deposits in oriental shrimp. 2. The analytical result of lipid classes showed that triglyceride and cholesterol were dominated in hepatopancreas and in muscle, hemolymph, and gonad, respectively. The major component of polar lipid was phosphatidyl choline. 3. The ratio of polar lipid to non-polar lipid was 20:80 in hepatopancreas and 50:50 in gonad, while muscle, hemolymph and the other protions contained a slightly higher ratio of polar lipid. 4. The major fatty acids composing of polar lipid and non-polar lipid in both sexes, male and female, were 16:0, 18:1, 20:5n-3, 22:6n-3, and 18:2n-6 acid. It was concluded that they had more polyenoic acids than saturated or monoenoic acids
