보육시설 급식운영 실태 조사 - 영아반을 중심으로

국문 초록
본 연구의 목적은 보육시설에서의 영아 급식운영 실태와 보육종사자들의 영아급식에 대한 인식을 조사하여 적절한 보완방향을 알아보는 데 있다. 본 연구를 통해 도출된 결론은 다음과 같다
1) 보육시설의 급식식단 작성에 대한 조사결과, 보육정보센터에서 제공하는 식단을 가장 많이 활용하는 것으로 조사되었다. 따라서 보육정보센터의 역할이 보다 활성화되어야 하고, 보다 전문적이고 다양한 급식정보 제공 활용이 가능한 영아급식에 관한 지침서 개발이 요구된다.
2) 보육시설 영아급식이 대부분 영아 발달연령이 고려되지 않은 유아식단을 중심으로 영아급식이 제공되고 있는 것으로 조사되었다. 또 보육시설 영아반 교사들이 영아급식에 관한 연수를 받아 본 경험이 없는 것으로 나타나 영아의 발달특성을 고려한 바람직한 영양섭취와 올바른 식습관 형성을 위해서 전문 영양교육 필요성이 절실히 요구된다.

영문 초록
The purpose of this research was to obtain the basic supportive data for improving meals" provision to infant/child at the childcare institutions. The methodological approach was to adopt the questionnaires dissemination formatted to survey various items relating to the meals provision offered to the infant/child which were sent to owners and teachers engaged in the childcare institutions. Based on the results from the research, following suggestions were made.
1) At the survey of those who prepare for the menu at the childcare institutions, the nutrition manager at the childcare information center was revealed to be the most important model among those responding to the questionnaires, which showed that the function of the information center should be more focused so that it could develop a standardized guidelines for providing meals suitably tailored to infant and child at the childcare institutions.
2) According to the survey results, meals for the infant group were not much different from those of the child group regardless of physical development between the two groups. Therefore, it is highly requested the basic attitude toward the developmental difference should be altered in a way that the meals for the younger age must be provided separately taking the vulnerability of infant into consideration. Most teachers in charge of the infant group were found out to be non-experienced from the professional training of infant-meal course. They wished to take the course in the future if such opportunities are given and the most favored training course from the respondents was the guidance to the unbalanced diet. In conclusion, the professional training of those persons engaged in the infant/child caring jobs is essentially needed to provide the infant with righteous nutritional meals as well as desirable meal habit.
